3. **Eggs and vanilla** — Add the eggs one at a time, beating after each, then the vanilla. Cold eggs curdle the creamed butter and knock out the air you just built.
4. **Dry and wet alternately** — Combine the flour, baking powder and salt and add them **alternately with the milk** in three additions, folding gently just until they disappear — do not beat.
5. **Fill and bake** — Fill each case exactly **two thirds full**. Bake for **18 to 20 minutes** until a skewer comes out clean and the tops spring back when pressed.
