# Fluffy Yeast Doughnuts

## Method

2. **Knead** — Mix the flour and salt, add the yeast mixture, yolks and vanilla and knead for **10 minutes**, then work in the soft butter gradually and knead 5 minutes more.
3. **First prove** — Cover the dough and leave it somewhere warm for **an hour** until doubled. Press with a finger — if the dent stays, it is ready.
4. **Roll and cut** — Roll the dough to **1.5 cm thick** and cut with a round cutter, and a smaller one for the hole. That thickness matters — thin dough gives flat doughnuts.
5. **Second prove** — Lay the pieces on a floured tray, cover and leave **45 minutes** until puffed and light. This step is the secret to lightness and the one most people skip.
6. **Fry** — Heat the oil to **175°C** and fry two at a time for **90 seconds a side**. A **white ring should appear around the middle** — that is the sign the oil is right.
7. **Glaze** — Whisk the icing sugar with the milk to the consistency of pouring cream and dip the doughnuts **while warm, not hot**. Hot doughnuts melt the glaze; cold ones will not hold it.
