# Homemade Frozen French Fries That Fry Up Crisp

> The secret to a crisp fry is **frying twice**: a first fry at **150°C** that cooks the inside without colouring it, and a second at **190°C** that builds the crust. And the freezing happens **between the two fries**, not after them.

Shop-bought frozen fries are expensive and full of additives, and the homemade version is cheaper and better. The whole idea is that the factory does half the work — and the rest waits in your freezer.

## Ingredients

- 2 kg — potatoes
- 1 tbsp — white vinegar
- 1 tbsp — salt
- oil for deep frying
- iced water
- freezer bags
- kitchen paper

## Method

1. **Cut them evenly** — Peel the potatoes and cut them into batons **1 cm thick, all the same**. Batons of different thickness cook at different speeds, and the thin ones burn before the thick ones are done.
2. **Soak in iced water** — Soak them in **iced water with a tablespoon of vinegar for an hour**. The soak strips the surface starch that makes the batons stick together, and the vinegar firms up the cell walls so they do not collapse.
3. **Dry them completely** — Drain and **dry them thoroughly with a towel**. Any water on the surface turns to steam in the oil and keeps the crust soft.
4. **The pale first fry** — Fry them at **150°C for 5 minutes only**, until they are cooked through and still **completely pale, with no colour at all**. The point here is to cook the inside, nothing else.
5. **Cool them right down** — Spread them on kitchen paper and let them cool **completely** — 30 minutes. Freezing them warm forms ice crystals inside that wreck the texture.
6. **Freeze them spread out** — Spread them on a tray **not touching** and freeze for **two hours**, then transfer to bags. That way you take out the amount you want instead of one frozen brick.
7. **The second fry, at serving time** — Straight from the freezer, fry at **190°C for 3 minutes** until golden. **Do not thaw them** — thawing makes them soft and soggy.

## Tips

- The first fry stays completely pale — any colour there means they will burn on the second.
- A tablespoon of vinegar in the soaking water stops the batons collapsing.
- Freeze them spread out for two hours before they go into bags.
- Fry them straight from the freezer — thawing ruins the result.

## FAQ

### Why fry them twice?
The first fry at low heat cooks the inside without colouring it, and the second at high heat builds the crisp crust quickly before the inside dries out. One fry means either a burnt outside or a raw middle.

### Why shouldn't I thaw them first?
Thawing brings the water in the ice crystals to the surface, and that water stops the crust forming — so they come out soft, soggy and greasy. Fry them straight from the freezer into hot oil.

### How long do they keep in the freezer?
Six months in a well-sealed bag with the air pressed out. If dry white patches appear (freezer burn) the texture suffers but they are not unsafe — and sealing them properly prevents it.
