# Overnight Oats with Banana and Cinnamon

> Overnight oats are raw oats soaked in cold milk overnight. The base ratio is 1:1 — half a cup of oats to half a cup of milk — plus a spoon of chia seeds to firm up the texture. There's no cooking at all.

Healthy breakfast runs into one problem: there's no time in the morning. Overnight oats solve it — five minutes before bed and it's ready straight from the fridge, and it keeps three days, so you can make three jars at once.

## Ingredients

### Base
- ½ cup — rolled oats (not instant)
- ½ cup — milk (or almond milk)
- ¼ cup — Greek yoghurt
- 1 tbsp — chia seeds

### Sweetening
- 1 tsp — honey or mashed dates
- ½ tsp — cinnamon
- ¼ tsp — vanilla

### Topping
- 1 — banana, sliced
- 1 tbsp — crushed nuts

## Method

1. **Mix** — In a glass jar, combine the oats, milk, yoghurt, chia seeds, honey, cinnamon and vanilla and stir well.
2. **Overnight** — Seal the jar and refrigerate for at least six hours — or simply overnight. The oats absorb the milk and the chia forms a gel.
3. **In the morning** — Stir it, and if it's too thick add a splash of milk. Top with the banana slices and nuts and eat straight from the jar.

## Tips

- Rolled oats, not instant — instant oats turn pasty and the texture suffers.
- Add the banana in the morning rather than at night so it doesn't brown.
- Make three jars at once and vary the topping: strawberry, berries, peanut butter, or cocoa.
- Want more protein? Add a scoop of protein powder or increase the yoghurt.

## FAQ

### How long does it keep?
Three days in a sealed jar in the fridge — without the topping. Add the fruit as you eat.

### Can I heat it?
Yes, a minute in the microwave, but it's designed to be eaten cold and that's where the time saving comes from.

### How many calories?
About 340 with the banana and nuts, including 12g of protein and 8g of fibre — a breakfast that holds until lunch.
