# Chinese Cuisine: The Wok, High Heat and the Rules of Fast Cooking

> Chinese stir-frying depends on one thing above all: **heat, and not crowding the pan**. Too much food at once drops the temperature and the ingredients steam in their own liquid instead of searing. Everything must also be prepped and within reach before the pan gets hot.

China's regional cuisines differ more than European national ones do: Sichuan is numbing and hot, Cantonese is delicate and steam-led, Shandong is savoury and soup-heavy, Jiangsu is sweet and slow. What travels internationally is mostly a Cantonese-derived stir-fry tradition, and that is what most home cooking abroad draws on.

## The essential dishes

### 1. Soy-glazed chicken stir-fry

The template for hundreds of dishes: protein seared, aromatics added, vegetables, then sauce thickened with cornflour slurry at the very end.

The sequence never changes, and the whole thing takes under ten minutes once the pan is hot.

### 2. Kung pao chicken

Sichuan classic with peanuts, dried chilli and **Sichuan peppercorn** — the numbing, citrusy tingle that ordinary pepper cannot substitute.

The chillies are fried whole to perfume the oil, not broken up. Broken chillies make the dish punishingly hot.

### 3. Chow mein

Noodles fried with vegetables and a soy-based sauce. The noodles are boiled, **rinsed cold and oiled** before they meet the pan, or they clump.

### 4. Spring rolls

The filling must be **completely cool and dry** before rolling. Warm filling steams inside the wrapper and the roll bursts in the oil.

### 5. Sweet and sour

The balance is the dish: rice vinegar, sugar, tomato and a little soy. Restaurant versions abroad are usually far sweeter than anything eaten in China.

### 6. Mapo tofu

Silken tofu in a fierce sauce of fermented broad bean paste and Sichuan peppercorn. The tofu is **slid in and barely stirred** — pushed around, it disintegrates.

## Velveting — the restaurant secret

Meat is tossed with cornflour, egg white and a little oil, rested fifteen minutes, then cooked. The coating holds moisture in and gives the silky texture that separates restaurant stir-fries from home ones.

It costs almost nothing in time and it is the single biggest upgrade available to a home cook.

## Heat and the pan

A domestic hob will never match a restaurant wok burner, so the compensations are: **use the widest pan you own**, get it properly hot before anything goes in, and **cook in two batches** rather than one crowded one.

Have every ingredient chopped and lined up before you start. Stir-frying gives you no time to prep mid-way.

## The pantry that matters

  - **Light and dark soy sauce:** light for salt, dark for colour and depth.
  - **Shaoxing wine:** the aroma behind most stir-fry sauces.
  - **Sichuan peppercorn:** numbing, not hot; no substitute exists.
  - **Doubanjiang:** fermented broad bean paste, the base of Sichuan cooking.
  - **Cornflour:** for velveting and for thickening at the end.

## Common mistakes

  - **Crowding the pan:** the food steams instead of searing.
  - **Cold pan:** everything sticks and nothing browns.
  - **Skipping velveting:** dry, tough meat.
  - **Warm spring roll filling:** the rolls burst.
  - **Stirring mapo tofu:** it breaks apart.

## Where to start

A simple soy chicken stir-fry — ten minutes, and it teaches heat management and sequence, which is nearly the whole cuisine.

Then chow mein and kung pao. Spring rolls last, because the rolling takes practice and the filling has to be properly cooled.
