# French Cuisine: The Mother Sauces and the Techniques the World Built On

If it splits: take a fresh yolk in a clean bowl and pour the split mixture into it drop by drop — it comes back completely.

Crisp pastry with an egg and cream filling. The secret is that the pastry is **baked empty first**, blind, with weights, so the base is not soggy when the liquid filling goes in.

Cooked summer vegetables. The good version cooks **each vegetable separately** and combines them afterwards — cooking them together leaves some collapsed and others raw.

## The five mother sauces

**Béchamel** (milk), **velouté** (white stock), **espagnole** (brown stock), **hollandaise** (butter and yolk), and **tomato sauce**. From these five, more than two hundred sauces derive through simple additions.

The practical idea: instead of memorising two hundred recipes, master five and understand the logic of derivation. Mornay is béchamel plus cheese. Aurore is velouté plus tomato.

**Mise en place:** preparing and cutting every ingredient before cooking begins. A French principle that went global.

**Sauté:** quick cooking over high heat in a little fat, with movement.

**Déglacer:** adding liquid to the pan after browning to dissolve the brown layer stuck to the base — that layer is concentrated flavour, not dirt.

**Blanchir:** a quick boil then a shock in iced water to fix the colour.

## Bread and baking

The French baguette is made from four ingredients only — flour, water, salt and yeast — and French law forbids any other addition in a traditional baguette.

The croissant is a laminated butter dough: layers of dough and butter folded and rolled repeatedly, each fold doubling the number of layers. The butter must stay cold throughout.
