# The National Dish of Every Arab Country — A Complete Guide

## Why does every Arab country cook differently?

Arab cuisines share a great deal — rice, lamb, pulses and ghee — but they diverge on two things: the spices that were locally available, and the cooking methods the environment imposed. Gulf cooking leans heavily on dried lime and cardamom because of the old trade routes to India; North African cooking runs on cumin, coriander and chilli; Levantine cooking is lighter and depends far more on fresh herbs and olive oil.

## Egypt — koshari

A street dish combining rice, lentils, macaroni and chickpeas with a sharp sauce and crisp onions. The cheapest filling meal in the whole Arab world, and its origins are a mix of Indian and Italian influences that arrived in Egypt in the nineteenth century.

Right behind it: **molokhia**, **mahshi**, **fattah** and **ta'ameya**.

## Saudi Arabia — kabsa

Basmati rice cooked in chicken or lamb broth with tomato, dried lime and kabsa spices. It's served on one large communal platter, and that is itself part of the hospitality.

## Yemen — mandi

Meat roasted above rice in a pit dug into the ground, so the juices run down into the grain and the smoke works into both. The closest thing to traditional pit cooking anywhere in the region.

## Jordan — mansaf

Lamb cooked in jameed (dried fermented yoghurt) and served over shrak bread and rice. This isn't only food — it's a complete hospitality ritual with its own rules for serving and eating.

## Palestine — maqluba and musakhan

Maqluba is layers of chicken, vegetables and rice turned upside down onto the platter at the table. Musakhan is sumac chicken with onions on taboon bread.

## Syria and Lebanon — kibbeh, shawarma and mezze

Levantine cooking is the best known Arab cuisine internationally, and its secret is the mezze: twenty small plates arriving together. **Kibbeh**, **tabbouleh**, **hummus** and **shawarma** all come from it.

## Iraq — dolma

Five different stuffed vegetables cooked in one pot in a pomegranate-molasses broth. The most generous dish in Arab cooking in terms of variety in a single pot.

## Morocco — tagine and couscous

Tagine is a steam-cooking method in a conical pot; couscous is grain steamed three times over a vegetable broth. Moroccan cooking is distinguished by mixing sweet and savoury — lamb with prunes, chicken with preserved lemon.

## Tunisia — brik and harissa

The hottest Arab cuisine, without argument. **Brik** is a thin pastry filled with tuna and a runny egg, and harissa is a chilli paste that goes into almost everything.

## Algeria — chorba and rechta

**Chorba frik** is the first thing on an Algerian Ramadan table every night of the month, and its smokiness comes from the green wheat itself.

## Sudan — mullah and aseeda

Mullah is a sauce eaten by hand with aseeda, and the sliminess of the okra in it is deliberate, because it's what lets you lift a mouthful. Sudanese cooking uses peanut flour in its sauces, which sets it apart.

## The Gulf — machboos

The everyday dish in Kuwaiti and Bahraini households: rice in chicken broth with bzar and dried lime. Close to kabsa, but more strongly spiced.
