# Why Does Bread Go Mouldy So Fast? And How to Store It

> Bread goes mouldy fast because it holds **a lot of moisture**, and the mould spores already floating in the air find it a perfect home. The fix: **away from heat and damp**, and in **the freezer** if it is more than two days — not the fridge.

A loaf you bought yesterday: you open the bag and there is a green spot. The loaf next to it is hard as a rock. Those are two completely different problems, and each has its own answer.

## The mould doesn't come from the bread

Mould spores are in the air around you right now — millions of them, very light, drifting.

Bread coming out of the oven is **practically sterile**, because the heat of baking kills everything. The contamination happens afterwards: while it cools, while it is wrapped, while it is stored, and every time a hand touches it.

And for a spore to grow it needs three things: **moisture, warmth and food**. Bread has all three.

## Moisture is the main driver

Fresh bread is **35 to 40% water**. That is a very high number by storage standards.

That is why soft bread moulds faster than rusk, flatbread faster than dry toast, and bread enriched with milk or butter faster than plain.

And any extra moisture — steam trapped in a bag, or a loaf wrapped while still warm — doubles the speed.

## The biggest mistake: wrapping it warm

If you wrap bread before it has cooled completely, the steam coming off it condenses on the inside of the plastic and drips back onto the crust.

The result is a wet surface — which is precisely what mould is waiting for.

**The rule:** let it cool completely on a rack, then wrap it.

## Warmth doubles the speed

Every 10°C roughly **doubles** the rate at which mould grows.

So a loaf that lasts five days in winter can go mouldy in two at the height of summer — same loaf, same wrapping.

Which is why the bread store should be the coolest part of the kitchen, and away from the oven, the hob and the window.

## Why the fridge is the worst place

This is the most common error. The fridge does slow the mould, but it creates a bigger problem: **retrogradation**.

Retrogradation is the rearrangement of the starch molecules after baking — the starch returns to its crystalline structure and pushes the water out, so the bread goes hard.

And the fastest temperature range for retrogradation is **between 0 and 7°C** — which is the fridge exactly.

The result: bread in the fridge stales in a single day, six times faster than bread on the worktop.

## The freezer is the right answer

The freezer stops the mould **and** the staling together, because below zero the starch cannot rearrange itself.

How:

  - Divide the loaf into portions that cover one meal — so you never thaw and refreeze.
  - Wrap it tightly to push the air out (a freezer bag, or baking paper plus a bag).
  - Write the date on it.

It keeps for **three months** in excellent condition.

## Reheating after freezing

Do not let it thaw on the worktop — that makes it rubbery.

**The right way:** straight from the freezer into a 180°C oven for 5–8 minutes. The heat reverses the retrogradation and brings the crust back crisp.

For slices, the toaster straight from the freezer works perfectly.

## Can I cut the mouldy bit off and eat the rest?

**No.** What you can see is only the fruiting part of the fungus — the microscopic threads run right through the loaf.

And some moulds produce **mycotoxins** that heat does not destroy and that cutting out the visible patch does not remove.

Bread is porous and soft, so the threads travel through it easily — unlike a hard cheese, where you can safely cut a piece away.

**The rule:** mould on a loaf? The whole loaf goes.

## Stale bread is good for plenty of things

Staling is not spoilage — dry bread is perfectly sound:

  - **Breadcrumbs:** blitz it and toast it in the oven.
  - **Fatteh and tashreeb:** dry bread soaks up broth better than fresh.
  - **Fattoush:** needs dry, crisp bread to begin with.
  - **Stuffing:** for stuffed vegetables and chicken.

## Homemade bread moulds faster — why?

Because commercial bread contains **preservatives** such as calcium propionate that prevent mould, and sometimes improvers that delay staling.

Homemade bread has no chemicals, so its natural life is **two or three days** — that is not a flaw in it, that is what it is.

And if you want to extend it naturally, sourdough lasts longer because its acidity holds the mould back.

## The bread bin: why it works

A wooden or metal bin with ventilation holes maintains a **balance** — enough humidity that the bread does not dry out, enough airflow that steam does not get trapped.

A sealed plastic bag traps moisture (faster mould), and uncovered bread dries out (faster staling). The bin sits between the two.

## Types of bread and how long each lasts

Not all bread is the same — the more moisture and fat, the shorter the life:

  - **Baladi flatbread:** high moisture, thin crust — two days on the worktop at most.
  - **Soft rolls and sliced bread:** milk, sugar and fat — moulds faster but stales slower.
  - **Wholemeal bread:** the bran holds more moisture — moulds faster than white.
  - **Sourdough:** its acidity holds mould back — four to five days easily.
  - **Rusk and dry bread:** under 10% moisture — months without mould.

## The smell arrives before the spot

Mould gives off a smell about a day before the colour shows — earthy, like a cupboard that has been shut too long.

If you catch that smell in the bread bag, the loaf is gone even if it looks fine. And the bag itself has to be thrown out rather than washed, because the spores stay on it and contaminate the next loaf.

Clean the bread bin itself with diluted white vinegar every couple of weeks — the crumbs that build up are a permanent source of contamination.

## In short

Cool, dry and ventilated for two days, the freezer for anything longer, and keep it well away from the fridge. And any mould that appears — the whole loaf goes.
