# Brazilian Brigadeiro Chocolate Truffles

> The doneness signal is unmistakable: **when you tilt the pan, the mixture slides as one mass and leaves the base bare for a second**. Before that it is too loose and the balls will not hold; after it, it turns rubbery. The tilted-pan test is the only reliable indicator — not the clock.

Brigadeiro is Brazil's national sweet, present at every birthday party. Three ingredients only: condensed milk, cocoa and butter. It takes 15 minutes, and the only difficulty is knowing when to take it off the heat.

## Ingredients

### Base
- 1 tin — sweetened condensed milk (395 g)
- 4 tbsp — unsweetened cocoa powder
- 2 tbsp — butter
- 1 pinch — salt

### The coating
- 1 cup — chocolate sprinkles

### Shaping
- 1 tbsp — butter for greasing your hands

## Method

1. **Sift** — Sift the cocoa so it does not lump — lumps are impossible to break up later.
2. **Mix cold** — Mix the condensed milk, cocoa, butter and salt in the pan **before you turn the heat on**, until smooth.
3. **Cook** — Over **medium-low heat**, stir **constantly** with a silicone spatula. You must reach every part of the base — the mixture sticks and burns in seconds.
4. **The doneness signal** — After 8-10 minutes, tilt the pan: if the mixture **slides as one mass and leaves the base bare for a second**, it is ready. Take it off immediately.
5. **Cool** — Pour it into a buttered dish and let it cool at room temperature for **40 to 60 minutes**. Do not refrigerate it (it sets too hard).
6. **Roll** — Butter your hands, take a teaspoonful and roll it into a ball, then roll it in the sprinkles.
7. **Serve** — Set each ball in a small paper case. They keep 3 days at room temperature.

## Tips

- The tilted-pan signal is the only reliable indicator — not the clock.
- Constant stirring that reaches the whole base — condensed milk burns in seconds.
- Cool at room temperature, not in the fridge — the fridge sets it too hard to roll.
- Re-butter your hands every 3-4 balls.

## FAQ

### The mixture is too loose to hold — what do I do?
Put it back on the heat and keep stirring until it reaches the tilted-pan signal. It is still salvageable.

### It came out rubbery and hard?
It was overcooked. Let it cool and serve it with a spoon in small cups as 'brigadeiro de colher' — also a well-known Brazilian version.

### Can I make other flavours?
Yes — 'beijinho' with desiccated coconut instead of cocoa, and 'cajuzinho' with ground peanut. Exactly the same method.
