# English Beef Wellington

> The base goes soggy from the moisture in the beef and mushrooms. The fix is three layers of protection: **the mushrooms are cooked until completely dry**, they are wrapped in smoked beef slices, and the parcel is **chilled for an hour** before it goes into the oven.

Beef Wellington is England's most famous celebration dish, with a reputation for difficulty. It is not difficult — it is precise. Every step has a single purpose: stopping moisture reaching the pastry. Follow the sequence and it works.

## Ingredients

### Meat
- 1 kg — beef fillet in one piece
- 1 tsp — coarse salt
- 1 tsp — cracked black pepper
- 2 tbsp — oil
- 2 tbsp — Dijon mustard

### The mushroom layer
- 600 g — mushrooms
- 2 cloves — garlic
- 1 — small onion
- 2 tbsp — butter
- 1 tsp — fresh thyme
- 1 tsp — salt

### Rolling
- 8 slices — thin smoked beef
- 500 g — puff pastry
- 2 — egg yolks + 1 tbsp milk
- 1 tsp — coarse salt for the top

## Method

1. **Sear the beef** — Dry the fillet thoroughly and season with salt and pepper. Sear it in very hot oil for **a minute on each side** until browned all over. Let it cool and brush it with the mustard.
2. **The mushroom layer — the critical step** — Blitz the mushrooms, onion and garlic fine in a processor. Put them in a dry pan over medium heat and stir for **20 to 25 minutes** until **all the moisture has gone** and it is a dry paste. Add the butter, thyme and salt.
3. **Cool** — Let the mushroom paste cool completely.
4. **First wrap** — Lay out cling film, overlap the smoked beef slices on it, spread the mushroom paste over them, set the fillet in the middle, and roll it **very tightly** in the cling film like a sweet wrapper. **Chill an hour**.
5. **Second wrap** — Roll out the puff pastry, unwrap the parcel and set it in the middle, wrap the pastry around it and seal the ends. **Chill another 30 minutes**.
6. **The top** — Brush with the egg yolk and milk, score shallow lines with a knife, and scatter the coarse salt.
7. **Bake** — In a **preheated 200°C oven** on a hot tray. 35 to 40 minutes until the pastry is deep golden (the centre should reach 52°C for medium-rare).
8. **Rest** — Leave it **10 minutes** before slicing. Cutting without resting loses all the juices.

## Tips

- Cook the mushrooms until completely dry — the single most important step against a soggy base.
- Chilling twice (after each wrap) sets the shape and stops moisture migrating.
- A hot tray in a hot oven — the base needs heat from below from the first second.
- The 10-minute rest before slicing is not optional.

## FAQ

### Why is my base soggy?
The mushrooms were not dry enough, or the parcel was not chilled, or the tray was cold. All three together are the fix.

### How do I know it is done without a thermometer?
By time: 35 minutes for a kilo of fillet is medium-rare, 40 minutes is medium. A thermometer is far more reliable for this dish.

### Can I make it ahead?
Yes — prepare it up to the egg wash and keep it in the fridge for 24 hours, or the freezer for a month. From the fridge it goes straight into the oven.
