# A Marinade for Grilled Beef and Kofta

> The best marinade for grilled beef is built on grated onion: it contains enzymes that break down the fibres gently, without wrecking the texture the way vinegar or lemon do over a long soak. The ratio: one grated and squeezed onion plus three tablespoons of oil per kilo of meat, marinated 4 to 8 hours.

Grilled beef comes out dry or tough for two reasons: a marinade that's too acidic, or the wrong grilling heat. Grated onion solves the first — it's the oldest natural tenderiser in Arab cooking, and it works without adding acidity.

## Ingredients

### Base
- 1 — large onion, grated and squeezed
- 3 tbsp — oil
- 6 cloves — garlic, crushed
- 2 tbsp — vinegar or lemon juice

### Spices
- 1 tbsp — mixed spice
- 1 tsp — cumin
- 1 tsp — ground coriander
- 1 tsp — black pepper
- ½ tsp — nutmeg
- 2 tsp — salt

### For kofta
- 1 cup — finely chopped parsley

## Method

1. **The onion** — Grate the onion on the fine side and squeeze it in a sieve. Use the **juice** only with cut meat — pieces of onion burn on the grill.
2. **Mix the marinade** — Combine the onion juice with the oil, garlic, vinegar and all the spices and salt.
3. **Cut meat** — Rub the marinade well into the meat by hand, cover and refrigerate for 4 to 8 hours. Beyond 12 hours the texture suffers.
4. **Kofta** — For kofta: mix the minced meat with the **whole** grated onion (not squeezed), the parsley and half the spices, and knead it well for five minutes until it becomes tacky. Chill for an hour before shaping.
5. **Before grilling** — Take the meat out half an hour ahead and wipe off the excess. The grill must be very hot from the start so a crust forms.

## Tips

- Onion juice only with cut meat, whole grated onion with kofta — the pieces burn on a grill.
- Kneading the kofta for five minutes isn't optional — without it, it falls off the skewer.
- Salt in the marinade is fine; the advice about salt drying meat applies to salting minutes before grilling, not to a long marinade.
- Real grilled flavour comes from the browned crust, so don't move the meat for the first two minutes.

## FAQ

### How long should the meat marinate?
Four to eight hours is ideal. Onion works slowly so it won't ruin the texture the way vinegar can, but don't exceed 12 hours.

### Why does my kofta fall off the skewer?
The meat wasn't kneaded enough, or the fat content is too low. It needs five minutes of kneading, at least 20% fat, and an hour resting in the fridge.

### Can I freeze the meat already marinated?
Yes, and it's better that way — it marinates as it thaws in the fridge, and saves time on the day.
