# Vegetable Kofta That Holds Together

> Vegetable kofta falls apart because **the vegetables hold too much water**. Three things fix it together: **squeeze the grated vegetables hard**, add a **starchy binder**, and **chill the mixture for an hour** before shaping.

Vegetable kofta is a filling, cheap plant-based option, and the usual frustration is watching it disintegrate in the pan. The cause is not a missing egg — it is excess water.

## Ingredients

- 2 — courgettes, grated
- 2 — carrots, grated
- 1 — potato, boiled and mashed
- 1 cup — cooked chickpeas, mashed
- 3/4 cup — ground oats
- 1 — onion, finely chopped
- 4 cloves — garlic
- 1 bunch — parsley
- 1 tbsp — cumin
- 1 tsp — ground coriander
- 1 tsp — salt
- 3 tbsp — oil

## Method

1. **Salt and squeeze** — Grate the courgette and carrot, salt them and leave them in a colander for **30 minutes**, then **squeeze them hard in a cloth**. The amount of water that comes out will surprise you — that is the whole problem.
2. **Dry out the onion** — Fry the chopped onion in a tablespoon of oil for **6 minutes** until its moisture has gone and it sweetens. Raw onion releases water into the mix.
3. **The binders** — Combine the squeezed vegetables with the mashed potato, mashed chickpeas and ground oats. All three are starches that absorb remaining moisture and hold everything together.
4. **Season** — Add the onion, garlic, parsley, cumin, coriander and salt, and work it with your hands until the mixture is even and holds its shape in your palm.
5. **Chill for an hour** — Cover the mixture and put it in the **fridge for an hour**. The cold firms the starch and lets the mixture set — this is the step most people skip.
6. **Shape and test one** — Shape **a single piece and test it** in the oil first. If it breaks up, add two more tablespoons of oats to the whole batch and test again before shaping the rest.
7. **Fry or bake** — Fry in medium-hot oil for **3 minutes a side**, or bake at **200°C for 25 minutes**, turning halfway, with a brushing of oil.

## Tips

- Squeeze the grated vegetables hard — by far the most important step.
- Test one piece before shaping the whole batch.
- An hour in the fridge changes the result completely; do not rush it.
- Ground oats are the best binder: they absorb moisture and add protein and fibre.

## FAQ

### Why does my vegetable kofta fall apart?
The vegetables are full of water. Salt the grated courgette and carrot, leave them half an hour, squeeze them hard in a cloth, add a starchy binder, and chill the mixture for an hour before shaping.

### Can I make it without egg?
Yes — this recipe is fully plant-based. Mashed potato, mashed chickpeas and oats bind better than egg does in a vegetable mixture, because they also absorb moisture.

### Can I freeze it?
Yes, and raw is better. Shape the pieces, freeze them spread on a tray for two hours, then bag them. Fry or bake straight from frozen with 5 extra minutes.
