# Authentic German Pretzels

> A pretzel's glossy brown colour and distinctive flavour do not come from the oven — they come from **a boiling baking-soda bath** it is dipped in for 30 seconds before baking. The alkalinity accelerates the Maillard reaction on the surface; without it you get ordinary bread that neither looks nor tastes like a pretzel.

The pretzel is the symbol of Bavaria, eaten with butter, with cheese, or on its own. The recipe is simple and the dough is ordinary — the one thing that makes it a pretzel is the alkaline boil before the oven.

## Ingredients


### Dough
- 4 cups — flour
- 1.5 cups — warm water
- 2 tsp — instant yeast
- 1 tbsp — sugar
- 2 tsp — salt
- 3 tbsp — soft butter

- 2 litres — water
- 0.33 cup — baking soda

### الوش
- 1 حبة — egg yolk + 1 tbsp water
- 2 tbsp — coarse salt

## Method

1. **Knead** — Knead all the dough ingredients for 8 to 10 minutes until smooth, elastic and not sticky.
2. **Prove** — Cover and leave it an hour somewhere warm until doubled.
3. **Shape** — Divide into 8 balls and roll each into a 60 cm rope, thin at the ends and thick in the middle. Make the knot: form a horseshoe, twist the two ends around each other once, and press them onto the lower curve.
4. **Cold rest** — Arrange them on a lined tray and refrigerate for **20 minutes** — the cold dries the surface and sets the shape for the bath.
5. **The soda bath — the step that makes a pretzel** — Bring the water to a boil and add the baking soda **gradually** (it will foam vigorously). Dip each pretzel for **exactly 30 seconds** and lift it out with a slotted skimmer.
6. **Top** — Brush each one with the egg yolk wash, sprinkle with coarse salt, and slash the thick part with a knife.
7. **Bake** — Bake at 220°C for 14 to 16 minutes until deep glossy brown.

## Tips

- The baking-soda boil is not optional — it is what gives the colour and the flavour. Without it this is ordinary bread.
- Use a stainless pot, not aluminium — soda reacts with aluminium.
- Exactly 30 seconds in the bath. Any longer gives a soapy taste.
- Rope thin at the ends and thick in the middle — that gives the right shape and the varied crunch.

## FAQ

### Can I make them without baking soda?
No — without it you get bread shaped like a pretzel but pale and completely ordinary in taste. The alkalinity is the whole identity of a pretzel.

### What do bakeries use?
German bakeries use a lye solution, which is far stronger and requires gloves and great care. Boiling baking soda is a safe home substitute with a close result.

### Why does mine taste soapy?
It stayed in the bath longer than 30 seconds, or there was too much soda. Stick to the ratio and the time.
