# Alfredo Sauce for White Pasta

> Real alfredo is butter, parmesan and pasta water — no cream at all. The creaminess comes from emulsifying the butter with the starch in the cooking water. If you do use cream, keep the heat very low or the sauce splits.

The alfredo sold in restaurants is loaded with cream and flour; the original in Rome has three ingredients. The difference is that the original relies on technique rather than ingredients: the starchy, salted pasta water is what binds butter to cheese and makes it creamy without cream.

## Ingredients


### The original
- 150 g — cold butter, cubed
- 1½ cups — finely grated parmesan
- 1 cup — reserved pasta cooking water
- ½ tsp — freshly ground black pepper

### Cream version
- 1 cup — cooking cream
- 3 cloves — garlic, finely chopped
- ¼ tsp — nutmeg

## Method

1. **Save the pasta water** — Before you drain the pasta, take out a cup of the cooking water. It's salted and full of starch, and it's the ingredient that binds the sauce — without it there is no alfredo.
2. **The butter** — In a wide pan over low heat, melt half the butter with a quarter cup of the pasta water and stir until they come together and turn milky.
3. **Pasta and cheese** — Take the pan off the heat, add the drained pasta, and sprinkle in the parmesan gradually while stirring constantly and adding pasta water a spoon at a time.
4. **The rest of the butter** — Add the remaining cold butter piece by piece and stir. The coldness helps the emulsion — the same principle as a French butter sauce.
5. **Pepper and consistency** — Freshly ground black pepper only. If it thickens too much, another spoon of pasta water. Serve immediately — alfredo doesn't wait.

## Tips

- The cheese goes in with the pan off the heat. High heat makes parmesan clump and turn stringy.
- Grate the cheese yourself. Pre-grated is coated in starch that stops it melting.
- If you use cream: very low heat, and never let it boil — boiling splits it.
- The sauce thickens fast as it cools. Make only what will be eaten.
