# Oven-Baked Breaded Escalope

## Ingredients

- 800 g — beef or chicken cutlets
- 2 cups — breadcrumbs

- 2 — eggs
- 1/2 cup — Parmesan

- 1 tsp — garlic powder
- 1 tsp — dried thyme
- 3 tbsp — olive oil
- 1 tsp — salt
- 1 — lemon

## Method

1. **Toast the breadcrumbs** — Toast the crumbs in a dry pan over medium heat for **5 minutes**, stirring constantly, until **golden**. This step is what replaces frying entirely.
2. **Season the coating** — Mix the toasted crumbs with the Parmesan, paprika, garlic powder, thyme and a tablespoon of olive oil. The oil helps them colour further in the oven.
3. **Pound the cutlets** — Place each cutlet between two sheets of plastic and pound to an **even 6 mm**. Uniform thickness means everything finishes at the same time.
4. **Season and dry** — Salt the cutlets and pat them dry. Wet meat stops the flour sticking, and flour that does not stick takes the breadcrumbs down with it.
5. **The three-stage coating** — Pass each cutlet through **flour**, shaking off the excess, then **beaten egg**, then **breadcrumbs, pressing firmly**. That order is what makes the coating hold.
6. **A preheated tray** — Heat the oven to **220°C with the tray inside**, oil the tray and lay the cutlets on it. The hot surface browns the underside immediately.
7. **Bake and turn** — Bake **12 minutes**, turn, and give it **8 minutes** more. Squeeze lemon over just before serving — the acid lifts everything.
