# Moroccan Msemen with Thin Layers

Msemen is a layered Moroccan flatbread eaten at breakfast with honey and butter. The commonest complaint is that the dough tears while being stretched — and the culprit is always flour.

## Ingredients

- 2 cups — flour
- 1 cup — fine semolina
- 1 tsp — salt
- 1 tsp — sugar
- 1 cup — warm water
- 0.5 cup — oil
- 0.25 cup — melted ghee
- 0.5 cup — fine semolina
- honey to serve

## Method

1. **Knead** — Mix the flour, semolina, salt and sugar, add the warm water gradually and knead for **10 minutes** until the dough is very soft, elastic and slightly tacky.
2. **Rest in oil** — Divide the dough into small balls, put them on an **oiled tray** and oil their tops too, then cover and leave for **30 minutes**. The oil relaxes the gluten and prevents drying.
3. **Stretch on oil** — Oil your work surface — **not flour**. Stretch each ball with your fingertips from the centre outward until it is **almost translucent** and you can see your hand through it.
4. **Butter and semolina** — Brush the stretched sheet with melted ghee and scatter fine semolina over it. That semolina is what separates the layers and stops them fusing together.
5. **The square fold** — Fold the four sides inward to make a square, then fold that square again into a smaller one. Each fold doubles the number of layers.
6. **Cook on the griddle** — Stretch the square gently a little larger and cook it on a hot griddle with a little ghee for **3 minutes a side** until golden and the layers show. Serve with honey.

- Stretch on oil, not flour — this is the single rule that separates success from failure.
- The dough is deliberately very soft and slightly tacky. A firm dough will never stretch translucent.
- The semolina between layers is not optional — it is what stops them fusing.
- It freezes stretched and folded before cooking, and goes straight from the freezer to the griddle.

### Why does the dough tear as I stretch it?
You are stretching on flour. Flour dries the dough so it tears — oil the surface and your hands, and the dough will slide and stretch translucent without breaking.

### Why are there no layers?
You did not scatter semolina between the folds, or you did not fold enough. Semolina separates the layers and the double square fold multiplies them — you need both.

### What is the difference from rghaif?
Rghaif use much the same dough but are baked or griddled without the same density of folding. Msemen is thinner, its layers are more distinct, and it uses more ghee.
