# Fried Syrian Kibbeh

> Kibbeh is made from a shell of soaked fine bulgur ground with very finely minced meat, onion and spices, filled with meat fried with pine nuts. The secret to shells that don't crack is wetting your hands with iced water while shaping, and chilling the shaped kibbeh before frying.

Kibbeh is the best-known Levantine starter, and the shaping is the hard part. The fix is simple: iced water on your hands, and a shell mixture that has been through the mincer twice.

## Ingredients


### Shell
- 2 cups — fine bulgur
- 400 g — lean beef, minced twice
- 1 small — onion
- 1 tsp — kibbeh spice (cinnamon + allspice + cumin)

### Filling
- 300 g — minced beef
- 1 medium — onion, chopped
- ¼ cup — pine nuts
- 1 tsp — pomegranate molasses

### Frying
- 3 cups — oil

## Method

1. **Soak the bulgur** — Rinse the fine bulgur and drain it, then cover and leave for thirty minutes to swell in its own moisture — don't add extra water.
2. **The shell** — Grind the bulgur with the meat, onion and spices through a mincer twice until you have a smooth, cohesive paste. Chill it for half an hour.
3. **The filling** — Fry the onion, then the mince with the spices until dry, add the pine nuts and pomegranate molasses, and let it cool completely.
4. **Shaping** — Wet your hands in iced water, take a ball of the shell mixture and hollow it with your finger, fill it, and close it into an oval pointed at both ends. Chill the shaped kibbeh for twenty minutes.
5. **Frying** — Deep-fry at 175°C until deep golden brown, about five minutes. Lift onto kitchen paper.
