# Vietnamese Bánh Mì Sandwich

> Bánh mì works on one equation: **fat + acid + herbs + crunch**. The quick pickle — carrot and daikon in vinegar and sugar for thirty minutes — is half the sandwich, and without it the whole thing is heavy and flat.

Bánh mì is what happened when French baking met Vietnamese cooking: a French baguette with a Vietnamese filling. The result is one of the world's great street sandwiches — and the secret isn't the meat, it's the pickle.

## Ingredients

### Quick pickle
- 1 — carrot, cut in long thin sticks
- 1 — daikon radish, cut in long sticks
- ½ cup — rice vinegar or white vinegar
- ¼ cup — sugar
- ½ cup — warm water
- 1 tsp — salt

### Meat
- 500 g — chicken breast or thinly sliced beef
- 2 tbsp — fish sauce
- 1 tbsp — sugar
- 3 cloves — garlic, crushed
- 1 tbsp — oil
- ½ tsp — black pepper

### To assemble
- 4 — baguettes or crusty rolls
- 4 tbsp — mayonnaise
- 1 — cucumber, cut in long slices
- 1 bunch — fresh coriander
- 2 — chillies, sliced

## Method

1. **Quick pickle** — Dissolve the sugar and salt in the warm water and vinegar, and submerge the carrot and daikon. Leave for **at least 30 minutes** at room temperature.
2. **Marinate the meat** — Mix the fish sauce, sugar, garlic and pepper, coat the meat, and leave for 20 minutes.
3. **Cook** — Sear the meat in a hot pan over high heat for 8-10 minutes until the edges colour. Rest for 5 minutes, then slice.
4. **Prepare the bread** — Warm the rolls in the oven for 4 minutes so the crust crisps, then split them along one side without separating the halves.
5. **Assemble** — Spread mayonnaise on both faces, then the meat, the cucumber, the **well-drained pickle**, and finally the coriander and chilli.
6. **Serve** — Press the sandwich gently and eat straight away — the crunch is gone within half an hour.

## Tips

- Drain the pickle thoroughly before it goes in — the liquid soaks the bread within minutes.
- The bread wants a crisp crust and a light crumb. A fresh baguette is closest to the Vietnamese loaf.
- The pickle keeps two weeks in the fridge — make a big jar.
- Mayonnaise isn't optional: it's the fat that balances the pickle's acidity.

## FAQ

### Which meat should I use?
The common version uses pork. This recipe uses beef or chicken with the same marinade, and the result is very close — the flavour comes from the fish sauce and the pickle rather than the meat itself.

### Can I make it ahead?
The components yes, the assembly no. Prepare the pickle and the meat in advance and build the sandwich at eating time so the bread stays crisp.

### Can it be vegetarian?
Yes — fried tofu or portobello mushrooms with the same marinade (soy instead of fish sauce) work excellently.
