# Vietnamese Goi Cuon, Fresh Rice Rolls

> Rice paper sticks and tears if it is wetted too much. The rule: **dip it for two seconds only in lukewarm (not hot) water** while it is still slightly stiff, and lay it on the surface — it finishes softening on its own in the time it takes you to add the filling.

Goi cuon are Vietnamese fresh rolls, not fried. Translucent rice paper around fresh vegetables, noodles and prawns. The lightest thing you can make, perfect for summer and for eating well, and with almost no cooking.

## Ingredients

### The roll
- 12 sheets — rice paper (22 cm)
- 150 g — thin rice noodles
- 300 g — cooked prawns, halved lengthways
- 1 — cucumber, in thin batons
- 1 — carrot, in thin batons
- 1 head — lettuce (the soft leaves)
- 1 bunch — mint, basil and coriander

### Peanut sauce
- 3 tbsp — peanut butter
- 2 tbsp — hoisin sauce (or soy + honey)
- 1 tbsp — rice vinegar
- 1 clove — garlic, crushed
- 4 tbsp — warm water
- 1 tsp — chilli oil

### Garnish
- 2 tbsp — crushed peanuts

## Method

1. **The noodles** — Boil the rice noodles as the packet says (usually 3 minutes), rinse them in cold water and drain well.
2. **The sauce** — Mix the peanut butter, hoisin, vinegar, garlic, warm water and chilli oil into a slightly loose sauce. Scatter the crushed peanuts.
3. **Set up** — Arrange all the prepared ingredients in dishes beside you — once the rice paper is wet there is no time to prepare anything.
4. **Wet the sheet** — Put **lukewarm** water in a wide dish, dip a sheet for **two seconds only** and lift it out while still slightly stiff. Lay it on a board or a damp cloth.
5. **Arrange** — On the lower third: a lettuce leaf, noodles, cucumber, carrot, herbs. And just above the filling lay the **prawn halves cut side down** so they show through the wrapper.
6. **Roll** — Lift the bottom edge over the filling and press, fold the sides in, and finish rolling **tightly**. The sheet sticks to itself.
7. **Serve** — Arrange the rolls without letting them touch (they stick together), and cover with a damp cloth. Serve at once with the sauce.

## Tips

- Two seconds only in lukewarm water — the sheet keeps softening while you fill it.
- Lukewarm water, not hot — hot water dissolves the sheet.
- Prawns cut side down so they show through the translucent wrapper.
- Do not let the rolls touch — they stick and tear when you separate them.

## FAQ

### Why does my rice paper tear?
It was over-wetted, or the water was hot. Two seconds in lukewarm water is enough — it should come out still a little stiff.

### Can I make them ahead?
4 hours at most, covered with a damp cloth in the fridge. Any longer and the paper dries and cracks.

### Can they be vegetarian?
Yes — fried tofu or mushrooms instead of prawns. The roll is essentially vegetables and herbs anyway.
