The difference between fudgy and cakey brownies is the fat-to-flour ratio: more fat and less flour gives a dense, fudgy crumb. The shiny crust on top comes from whipping the eggs with the sugar until pale — not from the chocolate you use.

    Melt the chocolate and butter over a bain-marie or in the microwave in 20-second bursts with stirring, then let it cool slightly. A hot mixture will cook the eggs.

    Whip eggs and sugar

    Whisk the eggs with the sugar for three full minutes until pale and thickened. This whipping is what creates the signature shiny crust on top.

    Combine

    Pour the warm chocolate mixture into the whipped eggs gradually while folding gently, and add the vanilla. Adding it gradually stops the eggs setting.

    Add the dry ingredients

    Sift the flour, cocoa and salt over the mixture and fold just until the flour disappears. Any extra beating develops gluten and turns brownies into cake.

    Bake

    Pour into a lined tin and bake at 175°C for 22 to 25 minutes. A skewer should come out with moist crumbs, not clean — clean means overbaked.
