Overnight oats are assembled at night and ready in the morning with no cooking. The ratio is one part oats to one part liquid, plus a spoonful of chia seeds for body. Fresh fruit and nuts go on in the morning — overnight they leach water and lose their crunch.

This is the easiest healthy breakfast there is: five minutes at night and zero in the morning. It suits school and work days perfectly because it is eaten cold with no preparation at all.

    Choosing oats

    Use rolled oats, not quick oats. Quick oats disintegrate completely and give a porridge texture, while rolled oats keep some chew.

    Mix

    Combine the oats, milk, yoghurt, chia seeds, honey, vanilla and pinch of salt in a jar and stir thoroughly until uniform.

    Steep

    Seal the jar and refrigerate for 6 hours to overnight. The oats absorb the liquid and the chia seeds swell and provide the creamy body.

    Morning stir

    Stir in the morning and check the consistency — if it is too thick add two tablespoons of milk; if it is loose add a spoonful of oats and wait 10 minutes.

    Toppings and serving

    Add the fresh fruit and nuts now, not the night before. Fruit leaches water and nuts lose their crunch if they steep.
