English Shepherd's Pie
The filling must be thick, not loose, before the potato goes on. A loose filling boils up around the sides and turns the dish to slop. Reduce it until a spoon leaves a trail across the base of the pan.

Shepherd's pie is a classic English home dish: minced meat and vegetables under a blanket of mashed potato, baked until the top browns. Cheap, filling, and made in one dish.
Method
-
1
Brown the mince
Brown the mince in a hot pan without stirring much, so it colours — that colour is the base of the flavour. Drain off excess fat.
⏱ 10 min -
2
Vegetables
Add the onion, carrot and celery and cook for 8 minutes, then the garlic and thyme for a minute.
⏱ 9 min -
3
The gravy
Sprinkle in the flour and stir for a minute, then add the tomato paste, stock and Worcestershire. Simmer over medium heat for 15 minutes until thick — a spoon should leave a trail across the base. Stir in the peas.

4
The mash
Mash the hot potatoes with the butter, warm milk and salt until smooth, then beat in the egg yolk (it helps the top brown).
⏱ 12 min -
5
Assemble
Spread the filling in an oven dish and spoon the mash over it from the edges inwards, sealing the rim. Rake the top with a fork — those ridges crisp up.
⏱ 8 min -
6
Bake
Scatter the cheese if using, and bake at 200°C for 25-30 minutes until the top browns and the edges bubble.

Rest
Leave it 10 minutes before serving so it sets.

Tips that actually matter
- The filling must be thick before the potato goes on. A loose one boils up around the sides.
- Start the mash at the edges — that seals the filling in so it can't bubble over the top.
- Fork ridges aren't decoration: the raised edges are what brown and crisp.
- Shepherd's pie is lamb; cottage pie is beef. Same method either way.
People also ask
Why did mine come out watery?
The filling wasn't reduced enough before the potato went on. It needs to reach the point where a spoon leaves a line across the base that doesn't close up straight away.
Can I make it ahead?
Yes — assemble it fully and keep it covered in the fridge for two days, or freeze for three months. Add 10 minutes from the fridge; thaw first from frozen.
Can it be vegetarian?
Yes — swap the meat for brown lentils or soya mince and use vegetable stock. The method and texture stay the same.
