Crispy Chicken Strips Restaurant Style

Marwa Mohamed

The rough crust in restaurant strips comes from crusty bits in the flour: sprinkle 3 tablespoons of the yogurt marinade into the flour mixture and rub it with your fingers, and do a double coating (flour then marinade then flour) with pressing. Let the pieces rest for 10 minutes before frying at 175 degrees so the crust holds on and doesn't fall off in the oil.

Chicken strips are seasoned and fried chicken breast slices with a rough, crispy flour crust, and they are the dish kids ask for from restaurants every week. At home, they turn out with the exact same crunch using just flour, starch, and yogurt, without breadcrumbs or ready-made mixes.

Method

  1. 1

    Cutting to a Uniform Size

Cut the breasts into lengthwise slices 2 cm wide and 8–10 cm long, and remove the white tendon. A uniform size ensures all pieces cook in the same amount of time, and anything thinner dries out before the crust browns.

    The Yogurt Marinade

Mix the yogurt, milk, lemon juice, marinade salt, garlic powder, marinade paprika, and pepper, and submerge the slices in it. Cover and leave them in the fridge for at least an hour and up to overnight. The acidity of the yogurt tenderizes the chicken, and its thickness makes the flour stick.

    The Flour Mixture

In a wide dish, mix the flour, starch, and baking powder and the flour spices well with a fork. The starch gives a dry crunch, and the baking powder creates small bubbles in the crust so it comes out light rather than hard like a brick.

    Crunchy Crumbs

Sprinkle 3 tablespoons of the marinade into the flour and rub it with your fingertips until small granules appear. These granules are what stick to the chicken and make the rough, crackly crust.

    Double Coating

Take out a slice and let the excess marinade drip off, press it firmly into the flour, then dip it back into the marinade and return it to the flour pressing with the palm of your hand for a few seconds. Shake off any loose flour.

    Resting Before Frying

Arrange the pieces on a wire rack or tray for 10 minutes until the flour absorbs the moisture and looks slightly damp. A crust that has rested holds onto the chicken, whereas one that goes straight into the oil falls off and ruins the oil.

    Heating the Oil

Heat deep oil with a depth of 5 cm to 175 degrees. Without a thermometer: dip the handle of a wooden spoon into the oil — if lots of bubbles immediately form around it, it is ready. Cold oil makes the crust absorb oil and get soggy.

    Frying in Batches

Drop in only 5–6 pieces at a time, and fry for 4–5 minutes turning once until deep golden. Wait a minute between each batch so the oil returns to its temperature — overcrowding drops the heat and makes the pieces stick together.

    Draining and Serving

Drain them on a wire rack instead of paper towels, and sprinkle lightly with salt while hot. Serve immediately with french fries and garlic sauce, ketchup, or honey mustard.

Tips that actually matter

  • Do not leave the chicken in the marinade for more than 24 hours — prolonged acidity makes its texture mushy.
  • No yogurt? A cup and a half of milk with a tablespoon of vinegar or lemon juice, and leave it for 10 minutes until it curdles and thickens.
  • One hand for the marinade and one for the flour — this way your fingers don't get coated in batter and each piece gets the same crust.
  • Want it spicy? Increase the chili powder in the flour and marinade with a small pinch of cumin.

People also ask

Why does the crust fall off the strips while frying?

Usually the pieces went straight into the oil without the 10-minute rest, or the flour wasn't pressed on well, or they were turned too early. Let them rest, press them firmly into the flour, and don't touch them for the first two minutes in the oil.

Why do the strips turn out dry on the inside?

Three reasons: the slices are thinner than 2 cm, they were fried for more than 5 minutes, or they weren't marinated in yogurt. Breasts have practically no fat, so the acidic marinade and exact timing are what preserve their juiciness.

Can I make strips in the air fryer or oven?

Yes: spray the pieces with oil on both sides, and in the air fryer 12–14 minutes at 200 degrees flipping halfway, and in the oven 20 minutes at 220 degrees on a wire rack. The crust will be crispy but softer than deep frying.

Can I prepare the strips and freeze them?

Yes, after coating and before frying: arrange the pieces on a tray in the freezer until frozen, then store in bags for up to 2 months. Fry them straight from frozen at 165 degrees and add two minutes, and do not let them thaw before frying because the crust will get mushy.
