    In a small pan, dissolve the cornflour in the cup of water, put it over the heat and stir until it thickens.

    In a blender, combine the milk, coconut, sugar, vanilla and the cornflour mixture once it has cooled a little.

    Blend thoroughly until completely smooth.

    Pass it through a fine sieve for a silky, even texture.

    Chill and serve

    Refrigerate the sobia for at least two hours.
