Homemade Sugarcane Juice Without a Press

Marwa Mohamed

Sugarcane juice can be made at home without a press: peel the cane, cut it into very small cubes, blitz it in a powerful blender with a little water, and strain twice through cloth. Add lemon immediately so the colour does not darken.

Sugarcane juice is one of Egypt's most popular street drinks, and most people assume it is impossible at home without the huge roller press. In fact a strong blender and a straining cloth get you remarkably close.

Method

  1. 1

    Choosing the cane

Pick firm, fresh, pale sticks with no black spots or dried ends. Old cane yields little juice and tastes flat.

  2. 2

    Peel and cut

Peel the cane with a large sharp knife and cut it into very small cubes (1 cm) — the smaller the pieces, the more the blender can extract.

  3. 3

    Blend

Put the cubes in a powerful blender with a cup of cold water and blitz on high for two full minutes until the cane breaks down into fine fibres.

    ⏱ 3 min
  4. 4

    First straining

Pass it through an ordinary sieve to remove the large fibres, pressing with the back of a spoon for the last drop.

    ⏱ 3 min
  5. 5

    Second straining

Strain again through clean cloth or muslin and wring it out hard by hand. Double straining is what gives the clear, street-stall texture.

    Serve

Add the lemon juice and pinch of salt immediately and stir, then serve over ice. The lemon stops the juice browning.

Tips that actually matter

  • Lemon goes in immediately after straining — cane juice oxidises and darkens within minutes, and acid stops it.
  • Very small pieces are the difference between a blender that extracts and one that just strains itself.
  • Drink it within the hour; after that it starts to ferment — which is why cane stalls press to order.
  • If your blender is not powerful, soak the pieces in water for an hour first to soften them.

People also ask

Does it really work without a cane press?

Yes, with two conditions: a powerful blender and very small pieces. The yield is lower than a professional press but the flavour is very close, and double straining gives the same clear texture.

Why does the colour darken so fast?

Oxidation on contact with air. Lemon juice immediately after straining slows it considerably, and keeping it in a sealed bottle in the fridge helps.

How long does it keep?

An hour or two at room temperature and about half a day refrigerated. After that it starts to ferment — which is why bottled fresh cane juice does not exist.
