    Season

    Season the chicken with the salt, pepper, ginger and milk, and leave it 30 minutes.

    Mix the starch, flour and baking powder, coat each piece and shake off the excess. Starch, not flour, is the secret to the Korean crunch.

    First fry

    Oil at 160°C. Fry in batches for 7 minutes until the chicken is cooked without colouring much. Lift onto a rack.

    Leave the chicken 5 minutes on the rack. The internal moisture rises to the surface, and it is that moisture which evaporates in the second fry to leave a dry shell.

    Second fry

    Raise the oil to 190°C and fry for just two minutes until deep golden and crisp.

    Heat all the sauce ingredients in a pan for 3 minutes until thickened and glossy.
