Fresh Pomegranate Juice Without Bitterness

Marwa Mohamed

Pomegranate juice turns bitter from two things: the white pith between the arils, and blitzing the seeds in a blender. Separate the arils from every scrap of membrane, and press gently instead of blending so the seeds stay intact.

Pomegranate juice is one of the most expensive juices and one of the richest in antioxidants, and the complaint you hear most is bitterness. That has nothing to do with the fruit — it comes from two things done wrong.

Method

  1. 1

    Choose the fruit

Pick pomegranates that feel heavy in the hand with taut skin and a deep colour. A light one means the arils have dried; wrinkled skin means it is old.

  2. 2

    Break it up under water

Quarter the pomegranate and break it apart in a bowl of water. The arils sink and the white pith floats — the easiest and cleanest separation there is.

    ⏱ 12 min
  3. 3

    Remove all the pith

Skim off every piece of floating white membrane and make sure none is left. That membrane is the primary source of bitterness, and nothing removes it later.

  4. 4

    Press, do not blend

Put the arils in a sieve and press them with the back of a spoon or your hand, or pulse them in a blender twice, very briefly. Prolonged blending crushes the seeds and releases bitterness.

    Strain

Strain the juice through a fine sieve and discard the seeds and pulp. This is what gives you a clear red juice rather than a cloudy one.

  6. 6

    Adjust and serve

Add the lemon and the pinch of salt, and sugar if the fruit is not sweet enough. Serve immediately over ice — pomegranate oxidises quickly and the flavour shifts.

Tips that actually matter

  • Break the fruit up under water — the arils sink and the pith floats, the cleanest separation.
  • Press, do not blitz. Crushed seeds release a bitterness nothing removes.
  • A pinch of salt lifts the sweetness and softens the sharp acidity.
  • The skin stains — wear an apron, and gloves if you care about your hands.

People also ask

Why is my pomegranate juice bitter?

Either white pith got in with the arils, or the seeds were crushed in the blender. Break the fruit up under water so the pith floats off, and press the arils rather than blending them.

Can I use a blender?

Only two very short pulses, followed by immediate straining. Continuous blending grinds the seeds and releases a strong bitterness — pressing by hand is safer.

How long does it keep?

Two days in a sealed bottle in the fridge, though the flavour and colour begin shifting within hours. Best drunk immediately, or frozen in ice-cube trays for up to 3 months.
