Turkish Künefe with Cheese
The syrup rule here is the opposite of what you expect: hot künefe and warm syrup, not cold. The temperature gap lets the syrup soak in without the base losing its crunch. Cold syrup on hot künefe shocks the pastry and softens it.

Turkish künefe differs from the Nabulsi kind: it is made in a small individual pan on the stove rather than in the oven, and the cheese stays stretchy. Its secret is the type of cheese and the stovetop frying.
Method
-
1
Syrup first
Boil the sugar and water for 8 minutes, add the lemon juice and orange blossom water, and take it off. Let it cool to warm — not cold and not hot.

2
Soak the cheese
If your cheese is salty, soak it in cold water for 4 to 6 hours, changing the water hourly, then squeeze it and pat it dry.
⏱ 20 min -
3
Chop the pastry
Chop the fine kunafa by hand or in a processor until it is in very small pieces, and work the ghee through it with your hands for 5 minutes until every strand is coated.
⏱ 10 min -
4
Assemble
Grease a pan with ghee, spread half the pastry and press it down firmly, add the cheese (leaving 2 cm clear at the edges), then the remaining pastry on top, pressed down.

5
Cook on the stove
Over medium-low heat, cook for 12 to 15 minutes, lifting an edge with a spoon now and then to check the colour. It should be an even deep gold.

6
Flip
Set a large plate over the pan and flip it in one movement, then slide it back in to brown the other side for 5 minutes.

Syrup
While the künefe is still hot, pour the warm syrup evenly over it. Scatter the pistachios and serve immediately while it is stretching.

Tips that actually matter
- Warm syrup on hot künefe — cold syrup shocks the pastry and softens it.
- Soak the cheese to draw out the salt — salty cheese ruins the whole dish.
- Work the ghee through by hand for 5 minutes — even distribution is the secret to even colour.
- Keep the cheese 2 cm from the edges so it does not leak out while cooking.
People also ask
How is it different from Nabulsi knafeh?
The Nabulsi version is baked in the oven with coarse pastry dyed orange and Nabulsi cheese. The Turkish version is cooked on the stove in a pan with finely chopped pastry, and the base fries in the ghee.
Which cheese should I use?
Soaked akkawi is the original. Unsalted mozzarella is an excellent, widely available substitute that stretches well. Avoid processed cheese — it does not stretch.
Why did my künefe come out soft?
The syrup was cold, or there was too much of it, or you cooked over high heat so the top browned while the base stayed raw. Medium-low heat and a longer time.
