Healthy Homemade Chicken Nuggets for Kids

Marwa Mohamed

Homemade nuggets come out tender inside when the mixture is coarsely minced and properly chilled. Mincing too fine gives a rubbery texture, and a warm mixture falls apart as you shape it — it needs 30 minutes in the fridge.

Shop nuggets are full of additives and contain less chicken than you would imagine. Homemade ones are cheaper, you know exactly what is in them, and they freeze for the whole week.

Method

  1. 1

    Chill the chicken

Cube the chicken breast and put it in the freezer for 20 minutes. Cold chicken minces cleanly; warm chicken smears into a paste.

  2. 2

    Mince coarsely

Pulse the chicken in a food processor in short bursts until coarsely minced — not a paste. Over-processing gives a rubbery texture.

    Mix

Add the egg, quarter cup of breadcrumbs, milk, spices and salt, and pulse twice only, just to distribute.

Chill, and do not skip it

Cover the mixture and refrigerate 30 minutes. The cold firms the fat and lets the breadcrumbs absorb moisture, so shaping is easy and the pieces hold.

    Toast the breadcrumbs

Toast the two cups of breadcrumbs in a dry pan for 5 minutes until golden. This is what lets the nuggets crisp in the oven without deep frying.

    Shape and coat

Shape flattened pieces with wet hands and pass them through flour, then egg, then the toasted breadcrumbs, pressing lightly.

    Bake or fry

Preheat a tray at 200°C, brush the pieces with oil and bake 12 minutes, turn, and give them 8 minutes more. Or fry 3 minutes a side.

Tips that actually matter

  • Coarse mince in short pulses — a paste gives a rubbery texture.
  • 30 minutes of chilling before shaping; without it the pieces fall apart.
  • Toast the breadcrumbs before coating so they crisp in the oven.
  • Freeze them raw and spread out; bake from frozen with 6 extra minutes.

People also ask

Why are my nuggets rubbery?

You minced the chicken too finely and it became a paste. Use short pulses in the processor until coarsely minced — that texture is what gives the tender bite.

Why do the pieces fall apart?

The mixture was warm. It needs 30 minutes in the fridge so the fat firms and the breadcrumbs absorb moisture — after that, shaping is easy and the pieces hold together.

Can I freeze them?

Yes, and it is the best approach: freeze them raw after coating, spread on a tray for two hours, then bag them. Bake or fry straight from frozen with 6 extra minutes; they keep 3 months.
