Veggie burgers fail at home for one recurring reason: moisture. Lentils absorb a great deal of water, and if they are not drained properly no binder will hold them.

    Cook and drain the lentils

    Cook brown lentils until tender but not collapsing, then drain and leave them in the sieve for 15 minutes to dry out. Moisture is the veggie burger's first enemy.

    Brown the onion

    Fry the onion until deep golden and add the garlic in the last minute. Raw onion releases water into the mixture; browned onion adds depth as well.

    Partial mashing

    Mash two thirds of the lentils with a fork and leave the remaining third whole. Mashing everything gives a pasty texture; leaving it all whole will not hold.

    Mix

    Combine the mashed lentils with the onion, ground oats, tomato paste, spices and parsley, and knead by hand for two minutes until it holds together and feels slightly tacky.

    Chill

    Shape into 2 cm patties and refrigerate for at least half an hour. The cold lets the oats absorb any remaining moisture and firms the patties up.

    Fry

    Fry in a pan over medium heat for 4 minutes a side, turning only once. Repeated turning breaks them apart.

Tips that actually matter

  • Drain the lentils for 15 minutes, not one — residual moisture defeats any binder.
  • Mash two thirds and leave a third whole — that is what gives a burger texture rather than a paste.
  • One turn only in the pan. Every extra flip increases the chance of crumbling.
