Lebanese Cuisine: Mezze, Salads and the 6 Essential Dishes

Lebanese cooking rests on three things: lemon, olive oil and fresh herbs. Parsley is treated as a vegetable rather than a garnish — real tabbouleh is a parsley salad with a little bulgur, not the reverse. And mezze is a way of eating, not a course.

Lebanon sits on the Mediterranean with mountains behind it, and the food reflects both: olive oil, citrus, herbs and grains from the coast; dairy, preserved meats and pulses from the hills. What ties it together is a light touch — Lebanese food is rarely heavy, and acidity is doing most of the work.

The essential dishes

1. Tabbouleh

Real tabbouleh is a parsley salad. Bulgur is a minor ingredient — no more than a fifth of the volume. Versions dominated by bulgur are a different dish entirely.

The parsley must be completely dry before chopping, and chopped with a sharp knife rather than a processor. Wet parsley bruises and the salad turns to sludge within the hour.

2. Hummus

Smoothness comes from three things: overcooked chickpeas, ice water in the blender, and good tahini. A pinch of bicarbonate in the cooking water breaks the skins down and is the single biggest improvement most people can make.

Blend for four full minutes, not thirty seconds. The texture changes noticeably in the last minute.

3. Fattoush

A bread salad built on sumac — its sharp, fruity acidity is the signature. The bread is fried or toasted and added at the last moment; added early it goes soft and the salad is ruined.

4. Manakish

Flatbread topped with a za'atar and olive oil paste, baked hot and fast. The paste should be loose, not dry — roughly equal parts za'atar and oil. A dry topping burns before the bread colours.

5. Sfiha

Small open meat pies from Baalbek. The mince is mixed with tomato, onion and pomegranate molasses, and the pastry is rolled thin so the filling dominates.

6. Kibbeh

Bulgur and meat, shaped and either fried, baked or eaten raw. The shell must be worked with wet hands and ice water to stay smooth and not crack in the oil.

Mezze is a system, not a starter

Mezze means many small plates on the table at once, shared, eaten slowly over a long sitting. It is social before it is culinary — the point is the length of the meal, not the number of dishes.

A balanced mezze has something acidic, something creamy, something fried and something raw. Get that spread right and the specific dishes matter less than people think.

The pantry that matters

  • Sumac: the fruity acidity behind fattoush and musakhan.
  • Za'atar: buy a Lebanese blend — heavy on thyme and sesame, light on filler.
  • Tahini: the single biggest variable in hummus quality.
  • Pomegranate molasses: sour-sweet depth in salads and meat.
  • Fine bulgur: for tabbouleh; coarse for kibbeh.

Common mistakes

  • Too much bulgur in tabbouleh: it stops being tabbouleh.
  • Chopping wet parsley: the salad turns to mush.
  • Adding fattoush bread early: it goes soft immediately.
  • Under-blending hummus: four minutes, not one.
  • Dry za'atar paste: it burns before the bread is done.

Where to start

Hummus is the easiest entry — one blender, ingredients you already have, and an immediately noticeable improvement over shop-bought. Then fattoush and tabbouleh, both knife work and no cooking.

Manakish next, then kibbeh last: it needs technique in the shell and patience in the shaping.
