Pakistani Cuisine: Karahi, Nihari, Chapli Kebab and 6 Famous Dishes

Pakistani cooking is stronger and richer than Indian, and its fundamental difference is that meat is the hero rather than vegetables and pulses. Its spices are toasted whole and ground fresh, and its most characteristic technique is bhuno: frying the onion and tomato over high heat until the oil separates — the sign that the base is finished.

Pakistan's cooking is an extension of North Indian cooking with a more pronounced Afghan and Persian influence: more meat, fewer vegetables, and stronger, less sweet spicing. Bread — naan and roti — is the foundation of the meal more than rice in most regions, and rice appears at occasions as biryani or pulao.

The core dishes

1. Karahi

Meat or chicken cooked in a deep iron pan, the karahi, with tomato, ginger, garlic and cracked black pepper.

The original has no onion, no curry powder and no cream. The sauce comes entirely from tomatoes collapsing over high heat, and the flavour from ginger, garlic, whole coriander and black pepper.

The black pepper is cracked coarsely, not ground fine — a coarse crack gives scattered bursts of heat, while fine grinding disperses it and loses the character.

2. Nihari

Meat cooked for six to eight hours over very low heat until it falls apart, with strong spices and a thick broth. Traditionally a breakfast dish.

The name comes from the Arabic "nahar", day — it was eaten in the morning after dawn prayers and lasted the whole day.

The broth is thickened with flour slaked in water in the last half hour. Sliced fresh ginger is scattered over at serving — that is not a garnish, it is part of the flavour.

3. Aloo gosht

Meat and potato in an onion and tomato sauce. The simplest and most common Pakistani home dish.

The potato goes in for the last twenty minutes — added at the start it collapses and thickens the sauce far too much.

The bhuno is decisive here: the onion must brown to deep gold, the tomato must collapse, and the oil must separate at the surface — only then does the meat go in.

4. Chapli kebab

A flattened Pashtun patty with egg, flour and dried pomegranate seeds, shallow-fried in fat on a griddle.

Dried pomegranate seeds (anardana) are the signature — they give a light sourness with no exact substitute. If unavailable, a splash of pomegranate molasses is the nearest thing.

The mixture rests an hour in the fridge before shaping so it holds together.

5. Biryani and pulao

Biryani layers rice, spices and meat and steams them sealed (dum). Pulao cooks the rice directly in the broth — lighter, simpler and less spiced.

Pakistani biryani is generally more strongly spiced and hotter than the Indian version.

6. Naan and roti

Roti is everyday bread of wholemeal flour baked on a griddle without yeast. Naan uses yeast and yogurt and is baked in a tandoor.

Roti puffs if the griddle is hot enough and the dough has rested half an hour.

Bhuno — the essential technique

"Bhuno" means frying the base — onion, garlic, ginger, tomato and spices — over high heat with stirring until the oil separates and rises to the surface.

This is neither optional nor a detail: it determines the depth of the entire dish. Any Pakistani dish that tastes weak has, in nine cases out of ten, a rushed bhuno behind it.

The spices

The principle: toast them whole and grind them fresh. Cumin, coriander, cardamom and clove are toasted in a dry pan until fragrant, then ground.

Garam masala goes in last, after the heat is off — it is an aromatic blend rather than a base, and cooking it destroys its fragrance entirely.

Ingredients worth buying

  • Fresh ginger and garlic: made into a paste and kept in the fridge.
  • Dried pomegranate seeds (anardana): for chapli kebab.
  • Whole black peppercorns: cracked coarsely rather than ground.
  • Ghee: it gives a completely different depth from oil.
  • Green and black cardamom: the black is smoky, stronger, and goes into savoury dishes.

How a meal is ordered

The meal is served all at once: one or two dishes with bread, rice, an onion and lemon salad, and raita (yogurt with cucumber).

Chai is drunk with milk and cardamom after meals and between them — a social ritual rather than merely a drink.

Common mistakes

  • A rushed bhuno: the whole dish tastes superficial.
  • Curry powder in karahi: it is not a Pakistani ingredient at all.
  • Grinding black pepper fine: it loses the karahi's distinctive bursts of heat.
  • Cooking garam masala: it loses its aroma — add it after the heat is off.
  • Potato from the start of aloo gosht: it collapses and over-thickens the sauce.

Where to start

Aloo gosht is the easiest entry — simple ingredients and a clear method, and it teaches you the bhuno that underlies everything.

Then karahi (half an hour). Chapli kebab after that, and nihari last because it needs six hours.

The difference from Indian cooking

The two share spices and techniques, but the differences are real: Pakistani has more meat and fewer vegetables and pulses, stronger and less sweet spicing, and far less cream and coconut milk.

Bread is the foundation of the meal in Pakistan more than rice, and the reverse in South India. And the Afghan influence in northern Pakistan produces grilled meat dishes with no equivalent in India.
