Why Do Potatoes Turn Black After Peeling? And the Fix

Potatoes go black after peeling because of an enzyme that reacts with oxygen the moment the knife opens the cells. The fix is to cut off the oxygen: submerge them in cold water straight away with a splash of lemon juice or vinegar, and keep them in the fridge for a day at most.

Why Do Potatoes Turn Black After Peeling? And the Fix

You peel a kilo of potatoes, leave them fifteen minutes on the worktop, and come back to find them a greyish brown. The food is fine, but it looks alarming — and the taste really does suffer once the darkening goes far enough.

What is happening inside the potato

Potatoes contain an enzyme called polyphenol oxidase, along with phenolic compounds. The two are kept apart in separate parts of the cell.

The moment the knife cuts, the walls break and the two meet oxygen — and the result is a brown pigment called melanin, the same one that colours apples, bananas and avocados.

That is why the darkening starts at the cut surface only, and the inside stays white until air reaches it.

Fix one: cold water

The simplest and fastest fix: submerge the peeled potatoes in cold water immediately.

The water forms a physical barrier between the surface and the air, and the cold slows the enzyme itself.

What matters is that they are completely covered — any part poking above the surface will darken on its own, and you will see a clear line where it sat.

Fix two: acid

The enzyme works in a neutral environment and is disabled in an acidic one.

A tablespoon of lemon juice or white vinegar per litre of water stops the reaction almost completely, and that amount does not affect the taste once they are boiled.

And if you are making mash or soup, that light acidity also helps keep the colour bright.

Fix three: cold

The fridge slows the enzyme considerably. Peeled potatoes submerged in cold water keep for up to 24 hours in the fridge without colouring.

Longer than that and the cells start taking on water and losing starch — the texture goes, even if the colour is fine.

A common mistake: warm water

People submerge potatoes in water from the tap without noticing it is warm.

Between 20°C and 40°C is the enzyme's most active range — so warm water speeds the darkening up rather than preventing it. It has to be cold water, ideally with ice if the weather is hot.

Darkening after boiling: a completely different story

If the potatoes have been boiled and come out grey or dark blue, that is not the same reaction.

It is a compound of the iron in the potato with chlorogenic acid, and it happens after cooking, as they cool.

The fix here is acid again: a squeeze of lemon in the cooking water prevents that colour completely. It happens more often with potatoes that have been stored a long time.

Black spots inside

If you cut a potato open and find a black patch in the centre, that has nothing to do with peeling — it is internal bruising from transport or storage.

Cut that part away and the rest is perfectly good. But if the patch is soft and smells bad, throw the whole potato out.

And green?

Green is a third story, and one worth paying attention to. Potatoes exposed to light form chlorophyll (green) — and chlorophyll itself is harmless.

The problem is that the same conditions trigger the production of solanine, which is bitter and toxic in quantity, and which cooking does not destroy.

The rule: peel the green away generously, and if it tastes bitter or the green is widespread, throw it out.

How to store potatoes properly in the first place

  • Dark, cool and dry — not the fridge, and not on the worktop in the sun.
  • Not in a plastic bag — plastic traps moisture and they rot. A paper bag or an open basket.
  • Away from onions — onions give off gases that make potatoes sprout faster.
  • Not in the fridge — extreme cold turns the starch to sugar, and the potatoes come out sweet and darken quickly when fried.

Darkening in the fryer

If your chips come out dark brown while still raw inside, the cause is usually too much sugar — either from fridge storage or from a variety that is not meant for frying.

The fix: soak the slices in cold water for half an hour to strip the surface sugar, and dry them well before they go in.

Ready-peeled potatoes: why they don't darken

The packaged potatoes in the supermarket stay white for days because they are treated with anti-oxidation solutions — usually sulphite compounds or citric acid.

Those work on exactly the principle above, just at industrial strength. At home, lemon and cold water do the same job for one day.

Freezing potatoes

Raw potatoes do not freeze — ice shatters their cells and they come out spongy.

If you want to freeze them you need to blanch them for 3–5 minutes first (that disables the enzyme for good), then cool them immediately in iced water, dry them, and only then freeze.

That is exactly the method the factories use for frozen potatoes.

In short

This darkening is enzymatic oxidation, not spoilage. Cold water straight away, a squeeze of lemon, the fridge, and a day at most. And if the darkening comes after boiling, or it is green, or there are spots inside — those are different causes, each with its own fix.
