Why Does Cake Sink in the Middle? 6 Causes and Their Fixes

Cake sinks because the structure did not set before the gas ran out. The commonest cause is opening the oven door before 20 minutes — the sudden temperature drop stops the expansion before the protein and starch have set, so the middle collapses.

A cake that comes out of the oven with a crater in the middle is one of baking's great frustrations — especially as it looks perfect in the oven and then collapses in the last few minutes or after it comes out.

How a cake rises in the first place

To understand the collapse you have to understand the rise. Three things happen at once:

  1. Gas forms and expands — from the chemical raiser, from whipped-in air, and from steam.
  2. The bubbles grow and push the batter upwards.
  3. Protein and starch set at a certain temperature and fix the structure around the bubbles.

And the collapse happens when those three occur in the wrong order — the gas runs out or escapes before the structure sets.

Cause one: opening the oven door early

This is by far the commonest cause.

Opening the door drops the oven temperature by 20-30 degrees immediately. That drop halts the gas expansion and lets the still-liquid structure collapse under its own weight.

The rule: do not open the door before 75% of the baking time has passed. For a cake that takes 35 minutes, that means not before 26 minutes.

If you need to check, look through the glass and turn on the oven light.

Cause two: too much raising agent

People assume more raiser equals more rise. The truth is the opposite.

Too much raiser produces more gas than the structure can hold — the bubbles grow too large, merge and burst, and the cake rises fast then collapses.

The right ratio: a teaspoon of baking powder per cup of flour, or a quarter teaspoon of soda per cup.

Cause three: mixing after the flour

Mixing after the flour goes in develops gluten — and a strong gluten network lifts the cake quickly at first, then contracts and pulls it back down.

The rule: once the flour is in, stir only until it disappears — even if small lumps remain. Those lumps vanish in the oven; developed gluten does not.

Cause four: an inaccurate oven

Most home ovens differ from the dial by 10 to 25 degrees.

A cool oven: the structure takes too long to set and the gas runs out first — so the cake sinks.

An oven that is too hot: the surface sets quickly while the middle is still liquid, and it keeps expanding until the crust cracks and it collapses.

The fix: an oven thermometer — the cheapest tool that solves the biggest problem in home baking.

Cause five: taking it out too early

A cake whose top has set while the middle is still liquid collapses the moment it comes out.

Testing for doneness:

  • A skewer in the centre should come out clean or with dry crumbs — not with wet batter.
  • Press the surface gently — it should spring back immediately. If it stays indented it is still raw.
  • The edges pull away slightly from the sides of the tin.

Cause six: cold ingredients

Cold eggs and milk curdle creamed butter and drive out the air trapped in it by the creaming.

A curdled mixture does not hold gas well — so the cake rises less and sinks more easily.

The fix: take the eggs and milk out of the fridge half an hour ahead. In a hurry, put the eggs in warm water for 10 minutes.

Less common causes

  • Too large a tin: the batter spreads thin so it dries outside and stays liquid inside.
  • Too small a tin: it overflows and the middle stays raw.
  • Banging the tin hard on the counter after pouring — it knocks out the very bubbles you need.
  • Moving the cake from place to place while hot — the vibration finishes it off.
  • Altitude — above 1000 metres the pressure is lower so gas expands faster, and recipes need adjusting.

The difference between a sunken middle and a flat cake

The diagnosis depends on the shape of the collapse:

  • A crater in the middle only: the centre did not cook — a cool oven, taking it out early, or too deep a tin.
  • The whole cake low and dense: a dead or insufficient raiser, or the whipped-in air was lost.
  • It rose then dropped suddenly: the door was opened, or it was jolted, or there was too much raiser.
  • A cracked surface with a sunken middle: the oven was too hot — the surface set while the middle kept expanding.

The tin matters

A dark metal tin absorbs more heat and bakes roughly 10 degrees faster than a pale one. Glass or ceramic heats more slowly and holds the heat longer.

The rule: with a dark or glass tin, reduce the temperature by 10 degrees and add a little time.

And the batter should fill the tin to two thirds of its height — less gives a thin cake that dries out, more overflows and leaves the middle raw.

If it has already sunk

A sunken cake is not thrown away — it is converted:

  • Cut it up into a trifle with layers of cream and fruit.
  • Crumble it into cake pops with cream cheese.
  • Dry it in the oven and make crumbs for a cheesecake base.
  • Cover the crater with cream or ganache if the taste is fine.

Prevention summary

  • Do not open the oven before 75% of the time has passed.
  • Stick to the stated quantity of raiser — more does harm.
  • Stir only until the flour disappears.
  • An oven thermometer reveals the real difference.
  • Everything at room temperature.
