Frozen Watermelon and Mint Juice
Watermelon juice comes out watery if you add ice — the fruit is already 92% water. Freeze the watermelon cubes themselves and blend them with nothing added, and you get a frozen drink with its flavour fully intact.

Watermelon juice is the simplest summer drink there is — one ingredient. The most common mistake is adding water or ice, which turns it into pink-coloured water.
Method
-
1
Cube and deseed
Cut the watermelon into cubes and remove every black seed. Blended seeds add a faint bitterness and a gritty texture.
⏱ 10 min -
2
Freeze
Spread the cubes on a tray and freeze them for 3 hours. Frozen fruit gives you the icy texture without the dilution that ice brings.
⏱ 8 min -
3
Blend
Blend the frozen cubes with no water whatsoever. There is plenty of water in the fruit; anything added thins the flavour immediately.
⏱ 4 min -
4
Lemon and salt
Add the lemon juice and the pinch of salt. Salt noticeably lifts the watermelon's sweetness, and the lemon stops the flavour falling flat.

5
Mint at the end
Add the mint leaves and blend for 5 seconds only. Long blending releases bitterness from the mint and pushes the colour toward brown.

Serve at once
Pour immediately and garnish with a lemon slice and a mint leaf. The drink separates into layers within minutes — that is normal, but it looks best fresh.

Tips that actually matter
- Freeze the watermelon rather than adding ice — the only rule that matters.
- No water at all. Watermelon is already 92% water.
- A pinch of salt increases the perceived sweetness without tasting salty.
- Remove the seeds — blended, they add bitterness and grit.
People also ask
Why is my juice watery?
You added water or ice. Watermelon is already 92% water — freeze the cubes and blend them alone, and you get a drink that is both frozen and full of flavour.
Why does it separate into layers?
Completely normal — the fibre settles and the liquid rises. Shake or stir it before drinking, and serve it straight after blending.
Can I make it without freezing?
You can, but the texture will be liquid rather than frozen. If you are in a hurry, chill the watermelon well in the fridge and blend it — far better than adding ice.
