Creamy Carrot and Ginger Soup Without Cream
Carrot soup comes out too sweet and flat when the carrots are boiled straight away. Roast them first so their sugars caramelise into more complex flavour compounds, and let ginger and lemon balance the sweetness.

Carrot soup is among the cheapest soups you can make and one of the richest in vitamin A, and its texture can be completely creamy without a drop of cream. The secret is in a step that happens before the pot.
Method

1
Roast the carrots
Cut the carrots, onion and potato, toss with olive oil and salt, and roast at 200°C for 30 minutes until browned at the edges.

2
Garlic goes in late
Add the unpeeled garlic cloves for the final 10 minutes of roasting. From the start it burns and turns bitter; in its skin it roasts without drying out.

3
Bloom the spices
In a pot, heat a tablespoon of oil and toast the cumin, cinnamon and grated ginger for 45 seconds until fragrant.
⏱ 2 min -
4
A short simmer
Add the roasted vegetables and the stock and simmer gently for 15 minutes only. The vegetables are already roasted and need no long cooking.
⏱ 17 min -
5
Blend hot
Blend with a stick blender while hot until completely smooth. Blending hot emulsifies the olive oil into the liquid, which is where the creaminess comes from.

Balance it
Add the lemon juice and the coconut milk if using, and taste. Acid is essential here — carrots are sweet, and without it the soup is sugary and dull.

Tips that actually matter
- Roast the carrots before simmering — it caramelises their sugars and deepens the flavour.
- A single potato replaces cream entirely.
- The acid is mandatory; without lemon the soup tastes like sugar.
- Garlic in its skin and only for the last 10 minutes, so it does not burn.
People also ask
Why roast the carrots before simmering?
Roasting caramelises the carrots' natural sugars into more complex flavour compounds and evaporates some of their water, concentrating the taste. Boiled carrots give a sweet, one-dimensional soup.
How is it creamy without cream?
One potato cooked alongside, and blending while hot. Hot blending emulsifies the olive oil into the liquid, and the potato starch supplies the body — the result is fully creamy.
Can I use frozen carrots?
You can, but roasting will not work as well because they carry a lot of water. Thaw and squeeze them, then brown them in a wide pan over high heat instead of roasting — a weaker but acceptable result.
