Chickpea Salad with Tahini and Lemon

Chickpea salad takes its flavour from being dressed while the chickpeas are still warm. Warm chickpeas absorb the dressing like a sponge, while cold ones reject it and it just sits on top. And the fresh vegetables go in right before serving, not hours ahead.

Chickpea salad is a complete meal of protein and fibre, and it keeps three days in the fridge. It is one of the few salads that improves with time — provided the steps go in the right order.

    Prepare the chickpeas

    If using dried chickpeas, soak overnight and boil for an hour and a half. If canned, rinse them well and warm them for two minutes — rinsing removes the viscous liquid and its metallic taste.

    The dressing

    Mix the tahini, lemon, garlic, cumin and salt, then add cold water a spoonful at a time while whisking until it reaches the consistency of pouring cream.

    Dress while warm

    Pour the dressing over the chickpeas while they are still warm and stir, then leave for 15 minutes. Warm chickpeas absorb the dressing; cold ones reject it.

    Drain the vegetables

    Dice the tomatoes and remove their watery seeds, salt the diced cucumber and leave it 10 minutes in a sieve to release its water. This stops the salad going watery.

    The red onion

    Soak the sliced red onion in cold salted water for 5 minutes and rinse. Soaking removes its sharpness and the aftertaste it leaves.

    Toss and serve

    Fold the drained vegetables through the dressed chickpeas with the olive oil and parsley, and dust with sumac. Serve at once, or store the dressed chickpeas on their own.

Tips that actually matter

  • Dress the chickpeas while warm — the single most important step in the recipe.
  • Cold water into the tahini, not hot — hot water makes it seize.
  • Salt and drain the cucumber, and deseed the tomatoes — both are sources of water.

You added hot water, or too much lemon at once. Add cold water a spoonful at a time while whisking — the tahini thickens first, then loosens and turns smooth.

How long does it keep?

The dressed chickpeas alone keep 3 days and improve in flavour. Once mixed with fresh vegetables, one day at most — so store them separately.
