Lentil Salad with Lemon and Cumin
Lentil salad turns to mush because people use yellow lentils, which are bred to collapse. Lentil salad needs brown or black lentils, boiled for just 20 minutes until tender while still holding their shape.

Lentil salad is a complete plant-protein meal and it keeps for three days in the fridge. The one mistake that ruins it happens in the supermarket, before you ever reach the kitchen.
Method
-
1
Rinse the lentils
Rinse the lentils in a sieve under running water and pick out any small stones. Unlike other pulses, lentils need no soaking at all.

2
Boil in plain water
Boil them in plenty of water with the bay leaf for 20 minutes with no salt, until tender but still holding their shape. Early salt toughens the skin.

3
Test a lentil
Taste one — it should be tender with a slight resistance under the tooth. If they are starting to collapse, they are a few minutes past.
⏱ 3 min -
4
Drain immediately
Drain them at once in a sieve and do not rinse them with cold water. Rinsing washes away the surface starch that holds the dressing on the grains.
⏱ 3 min -
5
Dress them warm
Mix the lemon, olive oil, garlic, cumin and salt and pour it over the lentils while they are still warm, stir, and leave for 15 minutes.

6
Drain the vegetables
Salt the diced cucumber and leave it 10 minutes in a sieve, deseed the tomato, and soak the red onion in iced water for 5 minutes.
⏱ 12 min -

Final toss
Fold the drained vegetables, parsley and mint through the dressed lentils, taste and adjust the lemon and salt. Serve at room temperature.

Tips that actually matter
- Brown or black lentils, not yellow — yellow ones are bred to collapse for soup.
- No salt in the cooking water — it toughens the skin and lengthens the cooking.
- Do not rinse the lentils after boiling — the surface starch holds the dressing.
- Dress them warm — cold lentils reject the dressing and it just sits on top.
People also ask
Why do my lentils turn to mush?
You used yellow or split lentils, which are designed to break down for soup. For lentil salad use brown or black, boil for just 20 minutes, and taste one before draining.
Do lentils need soaking?
No. Lentils are the one pulse that needs no soaking, because their skin is thin and they cook in 20-30 minutes. Just rinse them and pick out any small stones.
How long do they keep?
The dressed lentils alone keep 3 days and improve in flavour. Once mixed with fresh vegetables, one day — so store the dressed lentils and the vegetables separately.
