Chicken soup ends up with mushy vegetables because everything goes into the pot together. The broth needs an hour and the vegetables need twenty minutes. Simmer the broth first, strain it, and only then add fresh vegetables in order of cooking time.

Chicken and vegetable soup is the most universal soup there is and the first thing anyone makes in cold weather. It is simple — but the difference between a rich soup and a cloudy one full of mush is the order of operations.

    Rinse the chicken

    Rinse the chicken well with water and vinegar or lemon and remove any residue. This reduces gaminess and cuts down the foam in the broth.

    Start in cold water

    Put the chicken in cold water with one onion, bay and cardamom, and bring it slowly to a gentle simmer. Cold water extracts flavour better.

    Skim the foam

    Skim off the grey foam that rises in the first 15 minutes. That is coagulated protein and the primary cause of cloudiness.

    Simmer the broth

    Cook over low heat for 60 minutes at a bare tremble, then strain the broth, shred the chicken meat and discard the bones and spent vegetables.

    Brown fresh vegetables

    In a pot, brown the second onion, the carrot and celery in olive oil for 7 minutes, then add the garlic and turmeric for a minute. That browning adds depth nothing else supplies.

    Vegetables in order

    Pour in the strained broth, add the potato for 12 minutes, then the peas and corn for 5 minutes. Each vegetable in its own time so nothing collapses.

    Return the chicken

    Add the shredded chicken and salt and heat for 3 minutes only. The chicken is already cooked; longer makes it stringy and dry.

    Finish

    Off the heat, add the lemon juice and chopped parsley. Acid at the end lifts every other flavour and makes the soup taste clearer.
