Ethiopian Cuisine: Injera, Doro Wat, Shiro and 6 Famous Dishes
Ethiopian cooking is unique in two ways: injera, a fermented teff flatbread that serves as plate and spoon at once, and berbere, a red spice blend that is hot and deep and goes into most dishes. Eating is with the right hand directly from a shared tray — and that is not a detail, it is part of the meal itself.
Ethiopia is one of the oldest civilisations in the world, and its cooking developed largely insulated from outside influence — which makes it among the most distinctive cuisines anywhere. Orthodox Christian fasting, more than 180 days a year without animal products, created an extremely rich vegetarian tradition, which explains why its pulse and vegetable dishes are every bit as strong as its meat dishes.
The core dishes
1. Injera
A large spongy flatbread of fermented teff flour, baked on one side and covered in small eyes that catch the sauces.
Fermentation of three to five days — not hours. That is what gives the distinctive sourness (the taste that surprises people the first time) and the eyes.
No flipping on the griddle — it bakes on one side only, and the eyes form at the surface and stay open.
Teff is a very small gluten-free grain rich in iron and calcium. If it is unavailable, a mixture of teff with rice or barley flour comes close.
2. Doro wat
A chicken stew with berbere and onion, served with boiled eggs. The most important occasion dish in Ethiopia.
The onion is sautéed dry with no oil at all for the first fifteen to twenty minutes until it releases its water and softens, and only then does the niter kibbeh go in. That technique gives the dish its depth and body, and there is no substitute for it.
The quantity of onion is enormous — roughly the same weight as the chicken. The onion builds the sauce, not water.
3. Shiro
A stew made from ground chickpea or broad bean flour with berbere, onion and garlic. The best-known fasting dish, eaten daily in every household.
The powder is sprinkled gradually onto the hot liquid with continuous whisking — added all at once it forms lumps that never come out.
The final consistency is like a thick soup, and it is served in a hot clay dish over injera.
4. Tibs
Pieces of meat fried quickly over high heat with onion, pepper and rosemary. The simplest and fastest Ethiopian dish.
High heat and a short time — a matter of minutes. This is the only dish in Ethiopian cooking that is not slow.
The rosemary is a distinctive Ethiopian addition with no equivalent in neighbouring cuisines.
5. Misir wat
Red lentils with berbere and onion. A staple fasting dish: simple, cheap and deep in flavour.
Red lentils break down on their own so no thickening is needed, and berbere is the entire source of flavour.
6. Niter kibbeh
Clarified butter simmered with spices — cardamom, fenugreek, ginger, coriander, garlic and onion — then strained.
This is not ordinary butter — it is an ingredient in its own right, and it gives Ethiopian dishes a distinctive aromatic layer. It keeps for months at room temperature.
Berbere
A red spice blend based on dried red chilli with more than ten other spices: fenugreek, ajwain, cardamom, clove, ginger, coriander and cinnamon.
Fenugreek gives it its distinctive bitterness, and ajwain gives it the unique note that is hard to place.
It is not simply a chilli powder — its heat is moderate and depth is its point. Good ready-made berbere saves considerable effort.
Eating together
The injera is spread over a large tray with the stews placed on it in coloured circles, and everyone eats from the same tray with the right hand.
Gursha is a social tradition: feeding another person by hand as a mark of affection and respect. It is a fundamental part of the experience rather than a passing gesture.
Ingredients worth buying
- Berbere: the ingredient with no substitute — buy it ready-made from a good spice shop.
- Teff flour: for injera, available in African grocers.
- Shiro powder: ground chickpea with spices, sold ready-made.
- Fenugreek: it goes into berbere and niter kibbeh.
- Butter: the base of niter kibbeh.
How a meal is ordered
The meal is one shared tray: injera spread out with four to six different stews arranged on it in circles.
The variety is deliberate: a meat dish, a lentil dish, a vegetable dish and a salad — so everyone takes what they like, and the colours side by side are part of the pleasure of eating.
Common mistakes
- Fermenting injera for one day: no eyes and no sourness.
- Flipping injera on the griddle: the eyes close and the texture is destroyed.
- Adding oil to the onion at the start of doro wat: the onion fries instead of softening and the sauce comes out thin.
- Adding shiro powder all at once: lumps that never come out.
- Cooking tibs slowly: the meat dries out — this is the one fast dish.
Where to start
Misir wat is the easiest entry — red lentils, onion and berbere, half an hour and done.
Then tibs, the fastest dish. Shiro after that. Injera last — it needs teff, three days of fermentation and practice at the griddle.
Ethiopian coffee
Ethiopia is the original home of coffee, and the coffee ceremony (buna) is a full ritual taking an hour or more: the beans are washed and roasted in front of the guests, ground in a mortar, boiled in a clay pot (jebena), and poured from a height into small cups.
It is poured three times, each round with its own name, and leaving before the third is rude. Incense burns throughout — and the ceremony is social far more than it is about drinking coffee.
