Spanish Cuisine: Paella, Tapas, Tortilla and 6 Famous Dishes

Spanish cooking is built on sofrito — onion, garlic and tomato cooked down slowly — as the base of most dishes, along with olive oil and smoked paprika. Its most famous dish is paella, and its secret is not the saffron: it is the socarrat, the browned layer of rice in the base of the pan.

Spain's cooking is strongly regional: the north relies on fish and sauces, the centre on roast meat and pulses, and the south, Andalusia, on frying, olive oil and a clear Arab influence. What unites them: olive oil, paprika, and a culture of slow social eating.

The core dishes

1. Paella

Rice cooked in a wide shallow pan with stock, saffron and protein — seafood, or chicken and rabbit in the Valencian original.

Socarrat is the real measure: the layer of rice that browns and crisps in the base of the pan. You get it by leaving the heat high for the last two minutes without stirring and listening for the crackle.

And no stirring once the stock goes in. Paella is not risotto — stirring releases starch and makes it creamy, which is exactly the opposite of what is wanted.

2. Spanish tortilla

Potato and onion cooked slowly in plenty of olive oil, then mixed with egg and made into a thick omelette.

The potatoes are poached in the oil rather than fried — low heat with the oil covering them, until tender but not coloured. That is what gives the creamy interior.

The flip is the challenge: use a plate larger than the pan, turn it in one decisive movement, and slide it back.

3. Gazpacho

A cold raw tomato soup blended with cucumber, pepper, garlic, bread, olive oil and vinegar.

The bread is not a filler — it is what gives the creamy body. And the oil is added while it is blending so it emulsifies and gives a pale colour and silky texture.

It is served chilled, and tastes best after four hours in the fridge.

4. Patatas bravas

Cubes of fried potato with a spicy tomato sauce and sometimes aioli, garlic mayonnaise. The most famous tapa of all.

They are fried twice: once at medium heat to cook through, then rested, then once at high heat to crisp. That is the difference between restaurant bravas and home bravas.

5. Tapas

Not a dish — a way of eating: small plates taken standing with a drink, moving from bar to bar. The idea is social first.

The best known: gambas al ajillo (garlic prawns), patatas bravas, bonito (tuna) and manchego cheese.

6. Sofrito

Onion, garlic and tomato cooked in olive oil over very low heat for half an hour or more until they become a dark, sweet paste.

This is not a preliminary step — this is the dish. Any paella or Spanish stew that tastes weak usually has a rushed sofrito behind it.

Smoked paprika (pimentón)

Red peppers dried over oak smoke before grinding, which gives a distinctive smoky flavour with no substitute. It is the ingredient that makes Spanish food taste Spanish.

There are three grades: sweet, bittersweet and hot. Sweet is the most used. Add it off the heat or over very low heat — over high heat it burns in seconds and turns the whole dish bitter.

The Arab influence

Eight centuries of Islamic rule left a deep mark: rice itself entered Spain with the Arabs, as did saffron, lemons, oranges, almonds and cinnamon.

Words such as "aceituna" (olive) and "arroz" (rice) are Arabic in origin. And Andalusian confections like turrón are very close to nougat and Middle Eastern halva.

Ingredients worth buying

  • Smoked paprika (pimentón): the ingredient with no substitute.
  • Saffron: real threads, and a little goes a long way.
  • Bomba or short-grain rice: it absorbs three times its volume of stock without breaking.
  • Spanish olive oil: lighter than Greek and it stands up to frying.
  • Sherry vinegar: for gazpacho and salads.

How a meal is ordered

Eating in Spain is late: lunch at two or three, dinner at nine to eleven. Tapas fill the gap between them.

Lunch is the large meal, in three courses: starter, main, then dessert or fruit. Dinner is much lighter.

Common mistakes

  • Stirring paella after the stock: it turns into risotto and there is no socarrat.
  • Paprika over high heat: it burns and turns the whole dish bitter.
  • Frying tortilla potatoes instead of poaching them in oil: the texture comes out dry.
  • A rushed sofrito: the whole dish tastes empty.
  • Frying bravas once: either soft, or raw inside.

Where to start

Gazpacho is the easiest entry — a blender and nothing else, and it suits a hot summer perfectly.

Then patatas bravas and tortilla, both with ingredients you already have. Paella comes last, because it needs a wide pan, good stock and patience.

The sweets

Churros with chocolate is the best known: fried dough dipped in thick hot chocolate, eaten at breakfast or after a night out.

Crema catalana is close to crème brûlée but flavoured with lemon and cinnamon and cooked on the stove rather than in the oven.

Turrón is an almond and honey confection eaten at Christmas, Andalusian and Arab in origin — very close to nougat and Middle Eastern halva in both composition and method.

Spanish cheese

Manchego is the best known: a sheep's cheese from La Mancha, aged from two months to two years. Young it is soft and sweet; aged it is dry and sharp and used for grating.

It is served in triangular slices with quince paste (membrillo) — that sweet-savoury contrast is a purely Spanish tradition, and it appears constantly in tapas.

السوفريتو اتعمل مستعجل. البصل والثوم والطماطم لازم يتشوّحوا على نار هادية جدًا نص ساعة أو أكتر لحد ما يبقوا معجون داكن حلو — ده الطبق مش خطوة تمهيدية.

ليه البابريكا بتمرّر الأكل؟

اتحطّت على نار عالية. البابريكا المدخّنة بتحترق في ثواني — ضيفيها على نار مطفية أو هادية جدًا وقلّبي، والحرارة المتبقّية كفاية إنها تفتح.
