Authentic Italian Carbonara (No Cream)
Real carbonara is egg yolk, Pecorino, black pepper and cured pork — no cream at all. The sauce forms when you toss the eggs and cheese through hot pasta off the heat with a little pasta water, so the residual warmth cooks the egg without scrambling it.

Carbonara is the most widely mangled Italian dish on earth, and the culprit is almost always cream. The real sauce has four ingredients, and the only skill involved is heat control.
Method
-
1
Boil the pasta
Cook the spaghetti in well-salted boiling water until al dente — a full minute less than the packet says. Reserve a cup of the starchy cooking water before you drain.

2
Render the pork
In a dry pan over medium heat, cook the cured pork until the fat renders out and the edges crisp, about six minutes. Take the pan off the heat completely.
⏱ 6 min -
3
Make the egg paste
Whisk the yolks and whole egg with the grated cheese and a heavy hand of black pepper until you have a thick, sandy paste.
-
4
Combine off the heat
Move the drained pasta into the pan, still off the heat, and toss it through the rendered fat. Let it cool for thirty seconds, then pour in the egg paste and stir fast, adding pasta water a spoonful at a time until the sauce turns glossy and coats every strand.
-
5
Serve at once
Plate immediately with extra cheese and pepper. Carbonara waits for nobody — it stiffens as it cools.

Tips that actually matter
- The pan must be off the heat when the egg goes in. Direct heat gives you scrambled eggs, not sauce.
- Pasta water is full of starch, and that starch is what binds the sauce. Never pour it away.
- No cream, no garlic, no onion. Authentic carbonara contains none of them.
People also ask
My egg scrambled — what went wrong?
The pan was too hot. Lift it off the heat and let it cool for half a minute before the egg goes in, then stir quickly and constantly.
Can I use beef instead of pork?
Yes. Smoked beef or bastirma gives you the same rendered fat and salinity, and works well for anyone avoiding pork.
The sauce came out dry. How do I fix it?
Add hot pasta water a spoonful at a time while tossing, until the sauce loosens and goes glossy again.
