Saudi Kleeja with Spiced Date Filling

Marwa Mohamed

Kleeja dries out for two reasons: over-baking, or a dry date filling. The dates must be kneaded with ghee and a little warm water until pliable, and the discs come out of the oven while still pale in colour.

Saudi Kleeja with Spiced Date Filling

Kleeja is the best-known sweet of Qassim, made at Ramadan and Eid and served alongside Arabic coffee. Soft dough discs filled with dates spiced with cardamom, cinnamon and ginger — simple, and they keep for two weeks.

Method

  1. 1

    Make the dough

Rub the ghee and oil into the flour, then add the sugar, yeast, cardamom, fennel and salt, and work in the warm milk gradually until you have a soft dough.

    Prove

Cover the dough and leave it in a warm place for an hour, until it has doubled in size.

  3. 3

    Make the filling

Knead the date paste with ghee, the spices and warm water until it is pliable and easy to spread. If it still feels dry, add another spoonful of water.

    Shape the discs

Roll the dough thin and cut circles, then lay a thin layer of dates on one and cap it with a second circle — or take a ball of dough, open it, fill it, seal it and flatten it into a disc.

    Glaze

Brush the discs with egg yolk and arrange them on a baking sheet lined with parchment paper.

  6. 6

    Bake pale

Bake at 180°C for fifteen to eighteen minutes. They must come out still pale. Brown kleeja is dry kleeja.

    Cool completely

Let them cool fully before storing in an airtight tin, or trapped steam will make them soggy.

Tips that actually matter

  • A pliable, not dry, filling is the single most important factor in kleeja staying soft for days.
  • Take them out while still pale. They carry on cooking as they cool on the tray.
  • Fennel and cardamom are not optional — together they are the Qassimi flavour signature.
  • They keep two weeks in an airtight tin and freeze for three months.

People also ask

Why does my kleeja dry out so fast?

Over-baking, or a dry date filling. Pull them out pale, and knead the dates with ghee and warm water until genuinely soft.

Can I use a different filling?

Yes — kleeja is also made with sugar and cinnamon, or with walnut and sesame. Dates remain the most popular.

How is it different from maamoul?

Kleeja dough is flour and yeast, so it stays pliable like a pastry. Maamoul is semolina without yeast, so it crumbles in the mouth.
