Egyptian Sheep Head Meat with Garlic and Vinegar

Marwa Mohamed

The secret to sheep head meat is that the first boil with vinegar for 10 minutes, its water is discarded, then it is boiled in fresh water with onions, mastic, and cardamom until the knife easily pierces the thick skin (about 3 hours). Searing with garlic and vinegar at the end only gives flavor and a crispy crust, and it won't soften any piece that is still tough.

Sheep head meat is one of authentic Egyptian Eid al-Adha dishes: the cheeks, lips, jowl, and head skin are boiled until tender and gelatinous, then seared in ghee with a garlic, cumin, and vinegar tamiya. It is served hot with baladi bread or over fatta, and its broth is one of the richest broths.

Method

  1. 1

    Cleaning and Scorching

Even if you bought it cleaned, spread out the pieces and inspect the lips, around the ears, and the chin — these are the places where hair remains. Scrape it off with a knife, and pass any fine hair that doesn't scrape off over the stovetop burner until it burns and scrape the spot. Remaining hair is the primary cause of gaminess.

  2. 2

    Scrubbing and Cutting

Scrub the pieces well with flour, coarse salt, and half a lemon, and wash them under running water; the flour gathers the dirt and fat on the skin. Remove any visible fat lumps or glands, and cut large pieces the size of a palm so they boil evenly.

  3. 3

    First Boil

Place the pieces in a large pot, cover them with cold water, and add a quarter cup of vinegar. Let it come to a boil, boil for 10 minutes, then drain, discard the water, and wash the pieces and the pot. All the scum and odors come out in this first water.

    Boiling Until Tender

Return the pieces to the clean pot, cover with hot water rising 3 fingers above them, and add the onion, bay leaves, cardamom, mastic, cinnamon, and whole pepper. Once it boils, skim off the foam, add the boiling salt, lower the heat, and cover for 2.5–3 hours — or 50–60 minutes in a pressure cooker from the first whistle. It is done when the knife enters the thickest piece of skin without resistance.

    Cooling and Cutting

Transfer the pieces to a tray and let them sit for 15 minutes until you can handle them, then cut them into 2–3 cm cubes, removing any small bones or hard cartilage. When warm, they cut cleanly; when very hot, they fall apart under the knife. Strain the broth and keep it.

    Searing

Pat the cubes dry with paper towels. Melt the ghee in a wide pan over high heat, arrange the meat in a single layer, and leave it for 3–4 minutes without stirring until it takes on color and releases on its own, then stir for another 5 minutes. Cover the pan halfway because it splatters from the gelatin.

    Garlic Tamiya

Lower the heat to medium, add the minced garlic, cumin, black pepper, and chili pepper, and stir for 1 to 2 minutes until the garlic aroma releases and it just turns yellow. If the garlic browns too much, it becomes bitter and ruins the whole dish.

    Vinegar and Serving

Pour in one-third cup of vinegar and stir for 2 minutes until its harsh aroma mellows and it coats the pieces, then taste and adjust the salt. Serve hot immediately with baladi bread or over Eid fatta.

Tips that actually matter

  • Ask the butcher to debone and cut the head; sheep head meat is sold cleaned and deboned, which saves you an hour of cleaning — but inspect the lips and ears yourself anyway.
  • Sheep head broth is heavy and full of gelatin: put it in the fridge until the fat solidifies on top and remove it, and use it in Eid fatta or orzo soup.
  • If there is a tongue with the head, boil it with it, and peel off the white skin on it while it is still hot — once it cools, it sticks and won't peel.
  • Want it spicy? Add crushed chili flakes with the cumin. And if you like it with a sauce, pour half a cup of the broth with the vinegar and let it simmer for two minutes.

People also ask

How do I remove the gamy smell of sheep head meat?

The gaminess comes from 3 things: remaining hair in the skin, unremoved fat and glands, and the first boiling water. Scorch and scrape the hair well, scrub with flour, salt, and lemon, and boil the pieces for 10 minutes with vinegar and discard the water. Afterwards, the mastic, cardamom, and bay leaves in the second boil complete the job.

How long does sheep head meat take to boil?

On low heat in a regular pot, it takes 2.5 to 3 hours depending on the age of the animal, and a large calf's head takes longer. In a pressure cooker, it takes 50 to 60 minutes from the first whistle. The surefire sign is that the knife easily enters the thickest piece of skin.

Can I boil sheep head meat and freeze it?

Very much so, and this is the best method for Eid head. After boiling and cutting, let it cool, divide it into freezer bags with a little broth, and store it for up to 3 months. On serving day, thaw it in the fridge overnight, dry it, and sear it with garlic and vinegar normally.

Why does sheep head meat splatter and stick to the pan?

Because it is full of gelatin and water, so when it goes in wet onto hot ghee, it splatters, and when stirred too early, it sticks and breaks apart. Pat it dry with paper towels, use a non-stick pan or a well-heated cast-iron pan, and leave it for 3–4 minutes without stirring until it releases on its own, covering the pan halfway.
