Oven-baked escalope turns out pale and soft because breadcrumbs cannot brown by themselves in an oven — they are not submerged in oil. The fix: toast the crumbs in a dry pan until golden before you coat with them, so they enter the oven already browned.

Toast the crumbs in a dry pan over medium heat for 5 minutes, stirring constantly, until golden. This step is what replaces frying entirely.

Mix the toasted crumbs with the Parmesan, paprika, garlic powder, thyme and a tablespoon of olive oil. The oil helps them colour further in the oven.

Pound the cutlets
Place each cutlet between two sheets of plastic and pound to an even 6 mm. Uniform thickness means everything finishes at the same time.

Salt the cutlets and pat them dry. Wet meat stops the flour sticking, and flour that does not stick takes the breadcrumbs down with it.
